Work Lunch Meal Prep - Do They Last OK in the Fridge?

I have started full time office work 3 weeks, so need to adjust to making my lunches ahead. Instagram has served me some lovely clips of 3 days of filling salads made in a single batch, with grains, leaves, chopped cucumbers etc, all decanted into 3 glass dishes with clip lock lids. Before I splash out on the glass dishes, curious to hear if anyone is doing this in real life and do the salads last well? I can’t image chopped up cucumber still to be nice after 3 days in the fridge.

I've been doing this for years. The key is to make sure all 'leaves' are spun really well, so as little water from cleaning is left. Also I remove any seeds ( if there are any) from the centre of cucumber, as there is where a lot of moisture is. Grains should stay stable for longer than 3 days, in fact all of it should in the fridge.

Salads last pretty well in the fridge as long as you don't put dressing on them. Add that separately when you're about to eat it.

I find it's more of a problem getting bored of the salad and buying a BLT instead...

Thank you all, useful tips. I have just bought some edamame beans for the first time and will have a go at the lunch prep with naff plastic containers I already have for this weeks test drive.

Edamame beans go a bit slimy after open for a day or 2, IME.

You can also make and freezer basic sandwiches like ham or cheese or tuna or hummus and they defrost by lunch time (just hold off on adding cucumber/tomato/salad if you're freezing)!
