Would you use them? It’s a ‘use by,’ not a best before, which is giving me pause…

I would. Make sure they are cooked to piping hot.

If they haven't gone grey and don't smell off (off beef often smells of fish) I would eat them, if cooked thoroughly they should be fine.

If they looked, and smelt ok, I would.

You'd know if they were off so yes if they looked and smelt ok I would use them.
