What to cook with the last dregs....please help a frazzled mother out!

My brain seems to have run away in the heat! If anyone has any ideas for meals I can cook for two 2 year old and 2 adults with this food please help! Any suggestions?
Also have frozen peas and mixed veg in the freezer

A veggie pasta dish, you can make a pasta sauce with the onions, tomatoes, peppers, carrots, add the red lentils/tinned lentils or pulses, serve with the penne and grated cheese.

You could do a salad with the tinned pulses, the spinach, grated carrot, sweetcorn, onion, peppers, tomatoes. Also a rice salad along similar lines.

I would go with veggie bolognese. Though I wouldn’t wanna have to stand at the hob and make it mind you.

based on what my kids like, I’d do:

a chickpea and lentil curry with rice
sardine pasta
a frittata with the onions and peppers

Chilli pasta - fry onions, peppers, mix in tomatoes and pulses - simmer for 10mins. Ideally add chilli flakes (or dried herbs if you don't have or prefer) with frying, but if little one won't eat, separate a portion and add to yours when on final 10 minute simmer. You could add peas as well.

If not, cook lentils,onions, tomatoes, add herbs and mix with pasta.

If little one is fussy, may be an egg and some veggie sticks/tomato, plain pasta.

Bolognese using the lentils, peppers, courgette, onion, garlic (maybe carrot too) and tinned tomatoes serve with pasta (is that cheese in the back too- in which case shove some of that on too!)!

chickpea and frozen mixed veg curry (with onion and lentils in there too) with the rice?

my son loves tinned sardines in the tomato sauce over pasta with cheese on top. Im not a fan but it’s one of his favourites.

Thanks everyone you saved the day! I ended up making bolognaise and I big salad but enough ideas to stretch it out for the next couple of days. Deciding what to cook is hard enough without a heat wave 🥵🔥

Did I see a can of beans in there? How are you for condiments and spices? Any molasses, brown sugar, mustard? Worcestershire or soy? Basically you need sweet and umami.

Some of that onion and one of the peppers baked low and slow with the beans and the right seasonings can make a very tasty dish.

I see you've made it today, but sardines Bolognese works surprisingly well and my kids are it despite not eating sardines normally
