Big MN salad ideas

Enjoying my big salads in this hot weather and the joys of knocking up a meal with no cooking. Bonus of being able to eat a very big portion as I am used to eating a lot of anything that replaces carbs and fattening foods is a good thing.

Tonight I had iceberg lettuce, spicy little beetroots and a few dollops of cottage cheese. For lunch I had cold smoked mackerel, tomatoes and lettuce. Usually add a drizzle of extra virgin olive oil and a splash of balsamic. Tomorrow's dinner will be a Greek salad and cold roast chicken.

Anyone else love a good big salad and happy to share ideas?

(TW for competitive under-eaters or people who think being overweight is a bad heinous crime).

My current massive salad while I'm calorie counting:
Cucumber
Cherry or baby plum tomatoes
Sprinkle of cheese
Chopped up ham or gammon
All the mixed salad leaves (particularly partial to a bistro salad)
Zero fat greek yogurt mixed with Dijon mustard and low fat mayo (sometimes a pinch of garlic granules if not seeing anyone)

Obviously I'm on all the low fat stuff so this can be adjusted accordingly!

Tonight I had lambs lettuce, red pepper, baby cucumber, red onion, beetroot, salad cream with quiche.
Sometimes have the same salad with wholemeal pasta.

Nigella Lawson Sesame noodle salad.

cook and cool egg noodles
make dressing: Sesame oil, lime, soy sauce, sweet chilli sauce, peanut butter.
Mix the cold noodles in dressing.
Chop: mange tout, spring onions, red pepper all thinly.
Mix into noodles and add sesame seeds and mix in.
add chopped coriander if you like it!

Today a sort of Greek salad but with Little Gem, rocket, red chicory, tomatoes, cucumber, spring onions, feta olives, fresh thyme and watermelon. Loved it.

Yesterday - lots of radishes and cucumber with rocket and humous with hot sauce stirred in

I want Salad Nicoise but it's too hot to boil potatoes eggs and green beans.

Yesterday was a proper 90s mum salad. Iceberg lettuce, ham, cucumber, hard boiled egg, coleslaw, beetroot, tomatoes and salad cream.

Today we had tuna pasta salad. Cooked pasta tossed with tuna, sun dried tomatoes, black olives and sweetcorn in an olive oil and lemon dressing. It was amazing!

I had a good salad earlier in the week with the ready made falafel and packets of cooked quinoa, feta, tomatoes, cucumber etc.

You can turn pretty much any kinds of vegetables into a salad. Add some protein - chicken, prawns, tofu, eggs etc - plus some nice bread or a baked potato and you’ve got a meal.

It's using different dressings that add more variety. Google for ideas!

Here is one of my favourite salads - tabbouleh:

lots of parsley plus a bit of mint
cooked quinoa or soaked and squeezed burghul
tomatoes diced small
onions diced small
dressing of lemon juice, EVOO, salt and pepper
plus a pinch of chilli flakes if you like a bit of heat
