Celebration meal for non meat eaters

Looking for a lovely celebration meal which is suitable for a non meal eater and won’t take ages to prepare!

My go to vegetarian celebration meal is actually vegan. I do a mushroom and chestnut bourguinon.

For vegetarian meals, a roasted vegetable and cheese puff pastry tart (bought pastry) or a quiche. I love gruyere and onion but of course you can use any vegetables you want. Also a stir fry with cashew nuts. Or really good garlic mushrooms in a tomato sauce with good toast or bread. That makes a good starter too.

if you have time to prepare it beforehand, mujadara (spicy lentils and rice) is delicious and just gets taken out of the oven when it's time to eat. No last minute stuff to do. (Also vegan!)

I am neither vegetarian nor vegan and am not that keen on vegetables as a whole, but I would eat all of those and I'm quite a picky eater - in case you are also catering for non-vegetarians.

What I will say is that my friends who are vegetarians tell me they get given an awful lot of things with mushrooms and cheese and, of course, just because you are vegetarian doesn't mean you like either!

It probably depends on if the person being celebrated is the vegetarian or if it’s a guest. Me personally, I’d love an Indian or Sri Lankan feast, lots of different paneer, veg or lentil based dishes with rice, paratha (buy, don’t try to make), Indian sweets for pudding.

But if that’s not what the person being celebrated would love, I think you need to ask them. If they’re a meat eater, then I’d make what they want, with a vegetarian option. Steak and chips with peppercorn sauce with a stuffed roasted mushroom for the vegetarian and lots of peppercorn sauce (make sure it’s vegetarian, not made with beef stock).
