What’s for dinner today?

I ate out so I had a bowl with spinach and lemon kale, kimchi marinated tofu, green beans, roasted sweet potato, cucumber, red onion, ginger and chilli noodles and crispy shallots with lime, soy and sesame dressing. It was lovely. Then I had a banana and honey muffin and a large skinny latte. The latte was free so it tasted even better.

I probably wont have anything else for the rest of the day so I’ll live vicariously through you all.

What are you having?

TIA

Smoked salmon tagliatelle with asparagus

Vast quantities of carbs - didn’t feel hungry, had leftover homemade risotto whilst watching Stanley Tucci in Naples. Seems to have set off a chain reaction of sourdough toast & homemade fruitcake.
(I specified homemade in an attempt to make it sound less unhealthy and pre-diabetic…)

Last night was tandoori chicken coconut curry with spinach and brown rice (recipe from a new cookbook). Was delicious. Tonight is "CBA Friday" so frozen pizza.

Last night I had a wild Alaskan salmon fillet baked in paper with butter and a bit of sweet chilli sauce, Jersey potatoes and a mix of broccoli, green beans and sugar snap peas, I also did some Hollandaise sauce too. I don't usually do elaborate things for myself but I needed to take my mind off an important football match! Tonight's one of the batch chilli con care's from the freezer, far more usual!

Idk yet .
complex family diets :
dh pescatarian , won’t eat brown rice pasta ( eats like a child - bland food only)
dd unable to eat any acids because of a hernia so no citrus , vinegar, chilli . No white carbs because of POTS. And low fat bc of gallbladder issues .
following, as I want inspiration - love any kind of food, lots of garlic and chilli preferably
your lunch sounds yummy 🤤

Mango and lime chicken fillets with sundried tomato orzo, salad and tzatziki. None of it homemade unfortunately but at least it’s a fairly healthy option!

Just called into Tesco and saw that there were Jersey royals ! So fish ,asparagus and jersey royals. I could just eat jerseys with butter and salt but it's not very nutritious on its own .

Beef and barley casserole from the freezer, with baked potato and one of those steam veg bags.

DD has a couple of friends over tonight to celebrate the end of SATs - so we’ve had homemade pizza using DHs new pizza oven.
