The Kitchen Cabinet, Bristol - omlette video on YouTube

A few days ago I listened to TKC set in Bristol on Radio 4 Sounds. One question concerned making fluffy omlettes. One of the panel said a YouTube video by a particular French (I think) chef is the best omlette-making tutorial ever.
I was going to watch it this morning and - of course! - the Bristol episode is no longer available on Radio 4 Sounds 🤦🏻‍♀️
Did anybody hear it and also remember who the chef was?

I asked AI and here’s what I got:

Thanks, @MyDuvetDay
That was definitely the episode.
Just wish I could remember the name of the chef whose video is apparently so great.
I didn't expect the episode to disappear from Sounds so soon.

I watched that video just now , I'm traumatised😂. I couldn't eat an omelette with a runny uncooked middle. I like my omelettes like shoe leather and covered in ketchup.

Ah, it was perfect for me, @ArtShow
I like them as baveuse as they can be.
I remember having a tortilla in Spain aa a child nearly 50 years ago and they'd managed to keep the middle almost runny. It was delicious and I've never been able to replicate it myself.
