Please help me plan the perfect birthday day- Scotland

My husband turns 60 at the start of July. We were initially going to go away for a few days but the prices are eye watering!
Can anyone give me any ideas for a great day start to finish! With the money I could save on a few days away I’m thinking we could hire a mini bus for us and dc and do something special and memorable.
we live in central fife with little transport links hence the mini bus idea.
Info-
We have been to Edinburgh many times and done all the big restaurants so not overly fussy about a foodie day.
Dh loves being outside and hikes so a post picnic with champagne would be good but we can’t guarantee it’ll be good weather never mind dry and even though he wouldn’t mind that dc and I probably would 🙈
We’ve done a lot of the tourist things (Royal yacht, castle, museums etc) but I’m hoping for something with more of a wow factor.
We could obviously travel further than Edinburgh for the right thing.
We could take a few cars if it was off the beaten track a bit but I like the idea of a stress free day all travelling together.
Ideally I would like to go somewhere special for something “unexpected” and really surprise him.
Anything on water is out as he gets very seasick.
I think I’m wanting the moon on a stick but I thought of anyone could give me the perfect idea it would be someone on here.

What's the rough budget? And what kind of things does he enjoy?

What about one of those lochside saunas, you can hire out, there's loads dotted around. Or the Taymouth Marina looks lush.

Distillery tour?

I could suggest lots of food-based experiences, but you said not foodie related.
