Recipes for cakes made with vegetables!

I really like baking, although never get as much time as I'd like. I am trying to eat more plants atm and would appreciate any tried and trusted recipes for cakes made with veggies, like chocolate beetroot or anything else you recommend!

I can recommend this book, although you do need a really sharp grater for some of the recipes.

The 'good food' easy carrot cake is awesome. It uses oil and yoghurt instead of butter. And you can up the quantity of carrots slightly.

I know people make chocolate cake with beetroot but I've not tried as I'm not a fan of choc cake. Love beetroot though!
