What's your coronation chicken recipe?

Please?

My daughter is at her dad's over Easter, so my boyfriend is coming over. I asked him what he would like for tea tonight, and listed what I have in the freezer (including roast chicken) and he said coronation chicken baguettes.

I've made them for him plenty of times before, so he obviously likes my existing recipe, which is:
Roast chicken
Mayonnaise
Extra hot mango chutney
Sultanas
A bit of garam masalla.

But I just thought, if anybody has any exciting alternatives/additions to this, I am in the mood to try something new....

I use the one from the Archers a year of food and farming book, I can't remember if off the top of my head and I'm not at home. I know it involves toasting the spices and sautéing finely diced onion though , it's really good

Thank you! I was thinking about cooking the spices - I have always just added them raw before, but I am sure that's not the best idea....

The addition of onion sounds interesting.....

Roast chicken
good mayo
medium curry powder
mango chutney or pomegranate chutney

no fruit - makes it too sweet imho

Caramelise some onions and add the spices (coriander, cumin, cardamom, turmeric) to the hot onions. Add to the mayo chicken when cool.

Thanks all - some great ideas here. Love the lime juice idea! And fresh coriander. Sadly I have neither in the house, but next time, will definitely try these.

M&S chunky mango chutney is amazing. We also add sultanas (70s throw back).
