Mentally drained but want to escape the funk

I’m not really sure what my overall issue is but since Xmas I have been in a mental funk. No energy, extremely frustrated at any slight inconvenience, emotional, lack patience and motivation to do anything but bare basics.
I am seeing my GP on Monday about this but I am not expecting any miracles to happen overnight.

My diet has never been great but recently it’s been pretty awful. I know it isn’t helping but the general motivation to cook is just so overwhelming. My DH has been stepping up but he also feeling similar to me.

can anyone suggest some easy, quick meal ideas that are going to help us feel more healthy?

its just for me, DH and Dd(10). DH will eat anything, DD is slightly fussy and has an allergy to egg but I am really fussy about food texture and food mixing… which really doesn’t help!

We Are constantly eating take aways and ready meals and it’s costing a small fortune plus helping me to gain weight.

Just so fed up of feeling like shit and I’m hoping making this one change will finally drag me out of whatever this funk is!

Simmer meals helped me a lot. I haven’t had a cold all winter and lost a bit of weight. If you can’t afford then anything that greatly increased your plant and fiber intake so your gut microbiome can flourish is what I’d do - salad and smoothie every day for a start.
