Samphire

A totally waste of time post, but I've always wanted to try samphire. I ordered some with my grocery delivery and I've just cooked it for lunch with a fish cake and new potatoes.

Bleurgh! The disappointment! It is so, so salty! I thought it would be a bit like broccoli, I didn't think it through. Sea vegetable = sea = salt!

Anyway, I've got half a bag left if anyone wants it?!

😆Yeah, it's horrid. See also chard... And I'm mainly vegetarian!

MissingTrees · 19/03/2026 14:10

You need to soak it in cold water before you cook it. That way it isn’t too salty.

tobee · 19/03/2026 14:14

Ooh I love a bit of samphire

devildeepbluesea · 19/03/2026 14:15

Lush, saltier the better

Pebbles16 · 19/03/2026 14:15

One of my favourite vegetables!

tarheelbaby · 19/03/2026 14:16

I love samphire. Where did you order it? I don't see it in the shops anymore.

tealandteal · 19/03/2026 14:17

I’ve never had much luck cooking it myself but it’s lovely when I’ve had it in restaurants so I assume the problem is me!

ChubbyPuffling · 19/03/2026 14:24

Soak in fresh water for an hour (helps get the grit and any critters out too if you have picked it fresh) and then cook with loads of unsalted butter and season with black pepper. Really nice with lightly cooked razor clams.

I have bought it in Morrison's before - it's usually hiding with the spinach.

AudiobookListener · 19/03/2026 14:29

Love it raw in small quantities in a salad. Can't imagine it being nice cooked though. Your warning has been noted.

AnneLovesGilbert · 19/03/2026 14:30

I’ll have it! I love it and haven’t had it for years as never see it anywhere.

MrsTerryPratchett · 19/03/2026 14:30

I love salt so...

Mydogisagentleman · 19/03/2026 14:35

It's filthy.
We live in norfolk. It's like the national dish here.
Apparently it's best served with vinegar

Shinyhappyapple · 19/03/2026 14:39

Oh, I’ve only had it in restaurants and it’s never been salty. A little hard sometimes,
but if it’s cooked so that I can chew it, it’s quite nice. It seemed last year that it had replaced tender stem broccoli as the go-to veg accompaniment in local gastro pubs.

raffles25 · 19/03/2026 14:45

We live in Norfolk and the Samphire Man used to go round the pubs selling it. It’s lovely. Our pub used to get it from the Samphire Man and immediately cook it for the locals propping up the bar, covered in vinegar it’s delicious!

Waitrose sell it on their fish counter...

pencilcaseandcabbage · 19/03/2026 15:04

As a child we'd occasionally collect a small bucket full from the beach. It needed lots of soaking, and I was never really keen. It was just something to do in the 70s when staying at my aunties caravan site that had no entertainment! I was very surprised when it took off as a 'gourmet' dish!

WinterFrogs · 19/03/2026 15:06

I love it! Only morrisons sells it round my way

DinoLil · 19/03/2026 15:38

Oh wow! So many replies! I wasn't expecting that!

I was feeling sorry for myself on Sunday having not received any mothers day cards so splurged a la credit card online with Waitrose. The samphire popped up on there so I had to get some.

I'll try the rest of the bag by soaking half of it, cook and eat with vinegar. I'll try the other half raw in a salad.

I will report back! But not today. I'm all samphired out! I had to have a bowl of fancy blackcurrant ice cream to neutralise the salt 😆

Just joining in with the samphire live!

Nofksleft2give · 19/03/2026 16:02

Love it. Our local fishmonger sells it.

MummaMummaJumma · 19/03/2026 16:07

Am I the only one who viewed this thread thinking it was for opinions on the name ‘Samphire’ 🤣. I need to broaden my food knowledge clearly!

DinoLil · 19/03/2026 16:21

Hehehe @MummaMummaJumma Tbh, get your tiny violins at the ready, I'm disabled and my carer was here when my shopping was delivered. She literally flagged down the Waitrose van!

Anyway, she wanted to put everything away (aka have a nose) and I said I'd rather do it because I like to look at the stuff and dates and all that. She said she'd get everything out on the worktop for me to sort. SAMPHIRE?!?! she said! She also thought it was a girls name!

It's lovely. We have it with scallops and pasta with red pesto.

I just steam it till it's really soft. No butter needed

Snooks1971 · 19/03/2026 16:25

Lincolnshire here. Years ago we used to go and pick it from the fens. Boiled and then kept in jars in vinegar. It blew my tiny mind when I grew up, moved away and saw it selling for loadsa ££ in posh shops and restaurants as some sort of amazing delicacy!
