Please inspire me with your favourite healthy recipe

I'm trying to get back on track with healthy eating after being off the rails for a while.
I feel gross, bloated and ick. I enjoy cooking but don't always have a lot of time and we've got in a very bad habit as a family or order takeout or eat something easy but not horrifically healthy.

I've been searching the internet for some delicious, full of flavour recipes but the sheer quantity of it all is so overwhelming.

So please inspire me, what is your favourite healthy recipe? I am hoping it'll help me meal plan for next week.

Egg fried rice. This is a recipe similar to what I do. I often do it with chicken, sometimes prawns. You can add whatever veg you have rather than what's in the recipe. Very tasty and quick and healthy.

I’m on a diet, my dinners this week have been..
Monday- Mango and Avocado salad with a peri seasoned chicken breast.
Tue- Potato and Leek soup.
Wed- Spicy chilli and paprika fried eggs on sourdough.
Thurs- Turkey burger with left over mango salad.
Fri- chilli con carne inside a baked sweet potato.
The salad, chilli, eggs are all Joe wickes recipes.

Not a specific recipe but if you want really great food that is nutritious and filling I highly recommend Emily English on Instagram, and the two books she's published. I use her recipes loads - our favourite is probably the BLT pasta salad, or the Thai Curry chicken meatballs. Everything I've cooked has gone down really well with the whole family.

My favorite is a simple fried eggs, oven cooked “chips” and a large homemade coleslaw / carrot cabbage onion and. Little mayo.

or a thick carrot sweet potatoes and lentil soup - add a spoon of marmite
