Winter/spring puddings

Please suggest some good winter/spring puddings. 10 year old DS who is very active.

I often cook a chocolate cake.

In the summer we have a lot of fruit/berries. Strawberries and cream/ice cream.

Growing up we often had homemade puddings. Apple crumbles and similar.

Pineapple upside down pudding. So simple and store cupboard ingredients also pineapple good for hay fever and now you've asked for advice you'll need to provide pics of your creations. :)

Rhubarb crumble.

I also made a rhubarb, orange and honey compote this week - stewed about 5 sticks, 2 oranges, with the juice of another orange and about 2 son of honey (to taste). Nice with Greek yogurt.

I have some filo pastry at the moment so might do a pie with that - could just do rhubarb in an oven dish with sugar and the pastry scrunched up on top maybe.

When I was 10 I enjoyed

my dds favourite is self saucing pudding, I used to make lemon, orange or lemon and orange - it’s a deliha smith recipe https://www.deliaonline.com/recipes/meals-and-courses/desserts/hot-citrus-pudding. In this she uses all 3 citrus fruits but you can just use one fruit

the other of DDs favourite was a chocolate and pear self saucing pudding, but I can’t remember the exact recipe

I personally think you can't beat an apple crumble.

You could also just do more cake if you're running short on time during the day, Apple cakes, lemon drizzle, they all hold for a couple of days and there's something about eating a piece of cake after dinner.

Rhubarb fool. Cut the rhubarb into fairly short chunks, but in bowl and zap in microwave for a few minutes, add sugar to taste. When it has cooled fold in cream whipped fairly stiff and Greek yogurt. A little orange zest is nice.

If you have Sweet Cicely, cooking chunks of its stems with the rhubarb reduces the need for sugar. I keep forgetting that. This year I'm going to try freezing some.
