Weekend lunches?

Posting here for traffic.

Can I mine your minds for ideas for weekend lunches?

7yo and 3yo.

7yo doesn’t really like saucy stuff (eg lasagne, curry etc), 3 yo doesn’t like sandwiches.

It works when well I dish up family style.

Currently have chicken wraps, bacon/egg type breakfast and jacket potatoes on repeat. Made pizza last weekend.

Am slowly broadening 7yo’s horizons but it’s slow progress - she willingly had slightly spicy pepperoni on her pizza last weekend!

How about the recipes where you throw everything onto a baking tray and pop it in the oven . . . things like chicken, carrots, onion, and potatoes. Or sausagemeat made into balls with sweet potato, pepper and red onion

Similar to above but with rice: rice, chopped veggies, protein, seasoning, everything finely chopped. Then either in the oven or slow cooker.

My kids like home made chicken noodle soup if you can be bothered

if it’s only a weekend lunch: bagel with cream cheese and cherry tomatoes? Savoury pancakes? Omelette and a piece of toast?

Lunches on the weekend for us are always picky.

Some sort of bread (homemade if I’ve been organised on Friday, pitta or crusty bread from the shop if I’ve not). Whatever cheese we have in. Whatever ham/roast chicken or beef/proscuitto is in the fridge. Salad. Cucumber. Tomato. Olives (not that the kids touch them), humus or tzatziki or taramasalata. All in the middle and we self serve. Maybe if I’m feeling decadent there’s some sausage rolls or scotch eggs.

Fish finger wraps; falafels; toasties; quiche; spanakopita - all with crudites (whatever they eat of cucumber, carrot, celery, cherry tomatoes, olives, gherkins, apple)

Sausages in french stick.
Boiled egg in a cup with butter and toast.
Omelette
Sometimes a brunch so a cooked breakfast/lunch.

Saturday lunches for us vary depending on the season and whether we're busy or not but if we're home then I might make any of the following:

Homemade soup with crusty bread favourites are leek+potato or minestrone or chicken noodle soup.

Ham+cheese gallette with salad

Nicoise salad/ greek salad / halloumi salad

Bit of every thing lunch e.g. french bread, cheese, pate, salad, pickles etc.

Quesadillas with guacamole, salsa and sour cream.

For a treat we might have sushi.

We’re terrible for eating out so I’m not much good at weekend lunch suggestions but my children can be fussy and I’ve just made a huge batch of Jamie Oliver’s hidden 7 veg pasta sauce which my 3 year old who won’t touch vegetables declared was yummy. Freezes well so some of that, some pasta and some protein (frozen prawns and chicken breast pieces are a staple in our freezer) and you’re good to go. Bit of crusty bread and salad alongside maybe?

Also might sound stupid but have you tried making cobs rather than sandwiches? My sandwich hating little one loves a cheese cob but won’t eat the same filling between two slices of bread.

Following for ideas but popular here is pasta salad made with chopped spring onion, cucumber, sweet corn and pepper; also anything with puff pastry eg tuna and sweet corn tart (recipe from Hungry Little Bakers on Instagram), pesto pinwheels with cherry tomatoes, ham and cheese puffs etc. My 9-yo loves a good bowl of tomato soup with a ham and cheese sandwich which she dips in….

Tacos are a good weekend lunch - either crispy ones with beef mince and other toppings (salsa, lettuce, guacamole, cheese, sour cream etc etc) or soft ones with fish or chicken. Put everything on the table and everyone can dive in.

Also, sausage rolls go down well here (especially if they’re homemade!) plus pitta pizzas
