Please share your non UPF, gluten and dairy free meals that might also help me lose weight

I’m struggling with illness-related brain fog so would appreciate some easy meal suggestions please.

At the moment I eat:
smoked salmon fillets with mashed sweet potato & carrots, avocado, asparagus/broccoli/cabbage

bolognaise made with beef mince, passata, soffrito (really tiny carrot, celery, onion), herbs and garlic etc, which I have with vegetables

100% beef burgers served over salad with home made olive oil mayonnaise

chicken soup that I make with stock made from the chicken carcass

something like bacon or ham (probably upf strictly speaking) with boiled eggs, tomato, avocado, asparagus

omelette with mushrooms and courgette, tinned tomatoes

chicken thigh pieces marinated in various non-upf stuff like honey, herbs, spices, garlic etc served with salad and home made mayonnaise

I like to cook simple things and also things I can make a big pot of to dip into throughout the week. I’m struggling to find a stock alternative for cooking with lamb or beef although I make my own chicken stock. Beef and lamb bones are harder to come by and I don’t know how to reduce them down to the equivalent of a knorr stock pot for instance. I’d like to eat more vegetables. I don’t really eat beans and pulses as I used to follow a paleo diet for my illness and it’s left me feeling they’re not good for me. I like to eat low carb.

My grandchildren have got coeliac disease and I often make a massive pot of soup that I freeze into bags. I roast a butternut squash in the oven with red pepper and onion with olive oil and herbs, then blitz in the blender adding in vegetable stock (Knorr) and a can of coconut cream. They love this with a brioche gluten free roll and it's really filling.

Egg fried rice

Fajita chicken, either in a corn wrap or rice or with a salad. Replace the cheese with avocado.

Pulled pork with red slaw (red cabbage, carrot, apple cider vinegar and mayo)

Teriyaki salmon or chicken on rice or stir fried veg.
