Peeling hard boiled eggs

Hard boiled eggs that don’t peel are driving me nuts, and I’m wasting so much egg white with the shell.

I know it is said that it’s very fresh eggs that don’t peel, but even ones that I bought over a week ago don’t peel. Plus having kept chickens in the past, I know this rule not to be true.

Are there any tricks I’m missing other than plunging them into cold water when done?

If you crack the egg then put it into cold water, the cold water seeps into the area behind the shell and surrounds the egg. If you peel it after about a minute, the shell comes off without bits of egg attached as the whole egg has cooled quicker than putting it in cold water without cracking it first.

The egg type makes things easier / harder. The white shell ones from Lidl and Sainsbury's are difficult to peel. It doesn't matter if they are a day old or 2 weeks. The shells will not come off.

The brown shelled ones from Aldi, Tesco and Morrisons all peel really easily.

There is no discernable difference between starting in cold water or boiling water, if vinegar is added, if they are plunged into cold water after cooking or not and cooking time... I may have been taking notes because it drives me mad too

I find older ones harder in that the shell sticks to the white. Fresh ones the shell slides off.

I only use hard cooked eggs for egg mayonnaise. However, I don't boil them, I poach them to the consistency I want then mash. No shells to peel. But I suppose if you are using them sliced or for something other than egg mayo, well you might have to peel and use the above tips!
