Peeling hard boiled eggs

Hard boiled eggs that don’t peel are driving me nuts, and I’m wasting so much egg white with the shell.

I know it is said that it’s very fresh eggs that don’t peel, but even ones that I bought over a week ago don’t peel. Plus having kept chickens in the past, I know this rule not to be true.

Are there any tricks I’m missing other than plunging them into cold water when done?

Get a plastic tub
About 1/4 fill it with cold water and add your eggs
lid on
shake shake shake shake shake
Take out your freshly peeled eggs :)

Put them into the fridge for a while before peeling.

Use the side of your thumb and rub the shell off rather than try and pick it off with the nail.

Fresh eggs are an absolute bastard to peel; I only hard boil eggs that are about 10 days old where possible.

For some reason, doing them in the pressure cooker seems to make peeling easier.

Gently tap and roll them around on the worktop so all the shell is cracked like crazy paving, then it usually all peels off easily.

I only use hard cooked eggs for egg mayonnaise. However, I don't boil them, I poach them to the consistency I want then mash. No shells to peel. But I suppose if you are using them sliced or for something other than egg mayo, well you might have to peel and use the above tips!

Crack shell all over by rolling gently on the worktop and put into a basin of cold water. Then peel the eggs and the water. The water gets under the membrane of the egg making it easier to peel.

I just pour out the hot water fill the pot with cold tap water (eggs are still in pot) and peel under running cold water. The change from hot to cold the shell stays same size but egg contents shrink.

I run the eggs under cold water briefly, crack the shell, roll the egg with my hand so it all cracks (onto a piece of kitchen roll so it doesn't stick to the chopping board) and once I've taken one small piece off, insert a dessert spoon and use that to feel up the inside and twist off.

They don't peel well if you put them in cold water and bring it to the boil. Boil the water first and slip the eggs in. They peel no problem.

I do this, but then put them back in cold water for five minutes. The water creeps in between the shell and the egg and makes it dead easy to peel the egg. (I live near an egg farm so our eggs are usually uber-fresh and hard to peel).

I've read that tapping them with a spoon, gently until you hear the noise change) helps. Something about releasing the membrane from the shell?

It's the difference between putting them in the pan with cold water and which you bring to the boil, or lowering them into a water that's already on the boil.

Roll them on counter top gently to crack, then slide a teaspoon in and work around shell. Works every time.

You need an egg pricker to prick the egg before they boil. (Or so my husband insists).

Use a teaspoon. Crack the egg, insert the spoon under the shell with the curve uppermost and move around so the shell falls off the egg. It works every time for me.

I will try starting them in boiling water rather than cold and see if that helps.

Same here. And it’s easier peeling them in the bowl of water too.

They need to be chilled to separate the membrane. Then peel under cold running water.

Also, try different eggs. I don’t have any problem with either store bought or my own hen’s eggs. We eat a lot of boiled eggs. But if you are having trouble, I’d use a different sort of egg to see what difference it makes.
