What's for dinner?

Tonight the DCs are having chicken breasts with a mustard and honey cream sauce, with broccoli, rice and steamed carrots. Followed by tinned peaches and vanilla ice cream if I can persuade them to eat it.

I am having a halloumi and salad wrap as I am newly vegetarian.

I watched on netflix the almost-iconic series Jamies School Dinners which i had heard about but never seen. It simultaneously made me feel ALOT better about what my kids eat, but also made me feel that I need to branch out a bit and step outside my -and their- comfort zones. I know they like the chicken dish as it is one I make now and then. DS1 has food issues due to autism and this chicken dish is one of foods he will generally eat and enjoy (as long as there is just a hint of mustard). but I am stretching his tolerance a bit with the peaches and ice cream. So fingers crossed!!

We had jacket potatoes with cheese and beans tonight. Home made lamb kofte kebabs last night. Tomorrow I'm doing roast gammon (I often find I have more time to cook a roast on a Monday than a Sunday).

I’m a bit confused by all of these posts with all of these elaborate weekday meals. Do your kids not do sports or activities?!!! Are they just sitting in your house enjoying your kale etc?!!
My son and daughter between them do so much running, football, swimming and netball. The thought of being able to prepare a meal like this in the week blows my mind! They eat things taking longer to cook at weekends, but on weekdays it’s pasta/eggs/jacket pots etc.
How can people be smug that their kids are so inactive they can make a full dinner from scratch every night?!

My kids are 23 and 25.

My kids have a club every evening apart from a Wednesday. They are very active but also get fed well. I use my slow cooker a lot so it’s out on in the morning before school run/work and ready for us coming home.

My Dcs don't do any after school activities at all. But their school finishes at 4.30 and they are home by 5.30. They swim at the weekend and that's about it. But Ds1 has severe SEN and the school day and week wears him out emotionally and physically. Ds2 enjoys gaming and photography and swims at the weekend and goes trampolining while DS1's swimming is on as he needs a parent in the pool with him.

I'm not smug about having a disabled child TBH. But I also work on an ad hoc basis as DS's needs are so great that i gradually had to reduce my working hours. So I am lucky enough to be able to cook reasonably good meals- whether or not they eat them is another thing.

Tonight we are having chicken casserole with rice and peas. I cheat sometimes by using a tin of cream of chicken soup as the sauce.

ETA- Well, DS2 has a 'homework club' after school on Thursdays until 5 pm. he goes mainly because his BFF does and they get tea and biscuits if they turn up. Grin

Maybe don't assume we all have primary school aged kids, @Yorkshirerose1983 ? At high school age they took themselves to and from their clubs and as young adults now it's not my concern.

@HedwigHedgepig - the risotto did us for dinner on Tuesday, then had the leftovers as aranccini on Friday and I ate the last two for lunch on Saturday after reheating them in the air fryer.

Left over roast chicken. We're a family of 3, so we have enough left from the one we cooked yesterday.

Tomorrow I'm making chorizo, carrot and chickpea tagine.

@PastaAllaNorma I wish you hadn't told me that, I'm nap trapped under my 8 month old and starving 😂 it never occurred to me to use leftover risotto to make arancini until a couple of months ago, I could have kicked myself! Feel like I've cheated myself out of years of deliciousness!

Tonight I’m experimenting with a very low fat lasagne, using 3% chicken mince and blended fat free cottage cheese in place of white sauce, then super low fat grated cheese on top (melts well but tastes of nothing!). No idea what it will taste like! I have gallstones and just recovering from pancreatitis, so having to be extremely careful what I eat as I don’t want to trigger it.

Mine is 17, he's rarely home from school until after 5. He takes himself to the gym, football, etc as required. I like cooking and we all enjoy good food.

Unusually here, a really lazy one tonight - ready made spinach and ricotta tortellini, with ready made tomato and basil sauce. I might make some salad though.

In my defence, this morning I made a huge batch of semi veggie mince for a mega shepherds pie to take to dd tomorrow for her and 3 hollow legged Gdcs, plus me and dh.

I made a riff on aubergine parmigiana that has black beans added (Bold Beans recipe) that I was about to put in the oven then DH reminded me we'd agreed on takeaway pizza with the lads and all watching the Phoenician Scheme while we still have a movie subscription.

Ah well, that's tomorrow sorted.

Baked salmon, mash, creamy carrot and swede purée (leftovers from burns night) and sautéed kale. With a bit of spinach salad and a red cabbage and beetroot sauerkraut. Rhubarb and apple crumble with custard for pudding (also last night’s leftovers).

The nights my dc have activities are the ones when I do my cooking!

When I’m trying to referee fights and get homework done, it’s hard to cook from scratch. But when I have 1.5-4 hours free late afternoon/evening because I’ve dropped them off to Cubs or sports training, then I can cook and relax. Also there’s two of us, so usually I cook and Dh does all the running around.

I made a stew, with leftover roast lamb, onions, swede, carrots and tinned potatoes, threw it all in the slow cooker with some stock and it was delish. There is enough left for tomorrow 's dinner as well, which has made my day 😊
