Tonight the DCs are having chicken breasts with a mustard and honey cream sauce, with broccoli, rice and steamed carrots. Followed by tinned peaches and vanilla ice cream if I can persuade them to eat it.

I am having a halloumi and salad wrap as I am newly vegetarian.

I watched on netflix the almost-iconic series Jamies School Dinners which i had heard about but never seen. It simultaneously made me feel ALOT better about what my kids eat, but also made me feel that I need to branch out a bit and step outside my -and their- comfort zones. I know they like the chicken dish as it is one I make now and then. DS1 has food issues due to autism and this chicken dish is one of foods he will generally eat and enjoy (as long as there is just a hint of mustard). but I am stretching his tolerance a bit with the peaches and ice cream. So fingers crossed!!

Beef casserole, its been slowly cooking since 8am.

House to myself for the next two days so I've done the casserole the way I like it (extra lentils) and I'm set for food for both days 😁

I’ve just done this with lamb shanks but without the lentils though I do like them in mince.

I’m also home alone for a couple of days and the lamb with mashed potato and Brussels sprouts done in the air fryer with honey and balsamic vinegar is all I want to eat for a couple of days apart from my boiled eggs and toast breakfasts.

Dcs are having leftover (from the freezer) chicken Balti curry; it also has chickpeas, peppers, spinach and onions in, with boiled basmati rice.
DC2 is in a fussy phase at the moment so i will offer him the same with a small bit of curry on the side but won’t make him eat it obviously if he won’t try it. He will be happy with the rice and if he's hungry later he can have some toast. He ate it happily when I first cooked it but at the moment he’s just being awkward, I’ve learnt it’s best to not make a big deal and he will grow out of it (my other dc had similar phases and eat anything now)

There isn’t enough for me and dh to have too so think we will just have jacket potatoes with baked beans and cheese.

Our baked ham last night was really nice. And tonight it’s leftover ham with chips, fried eggs and beans.

Some great ideas for next week though.

I too have a fussy DS. And he’s 24 now! He is a real carnivore though. Will eat any meat. Only veg is sweetcorn or cucumber.

I think I’ll put spaghetti bolognaise on the menu later in the week as he will eat that and I put lots of veg in.

Dal and roasted vegetables. With my DD’s mil’s roti, which she has tried to teach me to make but I just can’t-so she posts me some!

After more than 4 decades and despite being a good cook I still can’t make chappati or paratha so my sister in law makes them for me to keep in the freezer and reheat when needed.

Haha, I am putting sweet pot fries on the side - I'm sure that must qualify as a vegetable right?! They do eat better than this usually, but nowhere near as well as the dcs on this thread. The looks I would get if I was to present them with a salad, and an array of veg sticks!

Just me for the next 2 months as Dh is away with work and Dd is at university (although she will be home at the weekends)
I’ve made a Quorn mince chilli with mixed beans and Mediterranean vegetables which I’m having with some sweet potato fries.I’ll have the rest tomorrow night with either a jacket potato or rice.

I’m having a tin of minestrone soup with toast. Got to stay really low fat at the minute and just not fancying much (gallbladder/pancreas related), so soup is my go to. I’ve made pizza for ds though.

Chickpea curry - made with blended up onion, garam masala, garlic purée, puréed squash, a tin of coconut milk and a tin of chickpeas. Served with brown rice, garlic naan and mango chutney. It's very mild and my picky DC reliably eat it.

I meant to make it with chicken instead of chickpeas, but didn't defrost the chicken in time, so will fry up the chicken tomorrow and add it to the sauce and that will be tomorrow night's tea.

Dcs had chicken salad and baguettes.

I was supposed to have halloumi and salad, but I ate a packet of crisps and a Turkish delight bar while waiting for DS2 to come out of his after school club and lost my appetite. I knew when I opened the pack that I would probably not want dinner after it and told myself 'No, I am hungry enough, this is just a snack'.

I’m a bit confused by all of these posts with all of these elaborate weekday meals. Do your kids not do sports or activities?!!! Are they just sitting in your house enjoying your kale etc?!!
My son and daughter between them do so much running, football, swimming and netball. The thought of being able to prepare a meal like this in the week blows my mind! They eat things taking longer to cook at weekends, but on weekdays it’s pasta/eggs/jacket pots etc.
How can people be smug that their kids are so inactive they can make a full dinner from scratch every night?!
