Favorite vegetarian and vegan dishes

I work in a Nice garden centre with tea rooms.
I have lots of ideas being vegetarian myself but the boss wants a refresh for the new year.
Give me your favorite dishes and snacks please.

Busy time of the morning for many!

I take it you've thought of all the obvious dishes, like vegetarian versions of lasagne and chilli? Lots of pasta and quiche recipes are naturally vegetarian or vegan.

I made Red Dragon Pie last night and it was lovely. It's essentially a cottage pie but with aduki beans and vegetables instead of mince.

I bought some textured soya protein last year. I'd always assumed it's full of additives but the stuff I bought was 100% soya. Obviously highly processed, but natural, and can be used to make reasonable vegetarian/vegan versions of classic meat dishes like boeuf bourgignon, beef and ale stew or pie and so on. Might be worth thinking about.

Cookie & Kate have a fabulous vegetarian chilli recipe (vegan), which is lovely served with either rice or paprika wedges, really warming, hearty winter food. I make it most weeks.

Any bean stew with halloumi served with crusty bread.

Chickpea and spinach curries.

Risotto, this time of year is great for butternut squash.

Why not just suggest some dishes for your boss or even better - get him to do a survey of the actual customers?

Vegan 3 bean chili
Leek and mushrooms pancakes
Lentil moussaka
Baked aubergine with red peppers spinach mushrooms

The fish isn't under vegan vegetarian it's a flavour of the current menu we do do chicken dishes too but no other meats.

I make a lovely butternut squash, chestnut and Wensleydale wellington as my Sunday roast meat alternative.

other regulars - roasted veg tagine (mine is an Ottolenghi one) with couscous, roast veg curry, Dahl and rice (a massive family favourite including the meat eaters), lentil bake, lentil hot pot (the Jamie Oliver vegan one is really nice), various pasta dishes!

I love it! I find I crave it sometimes - must be for the iron as I used to feel like that about steak!
