Cottage cheese. What to do with it?

Other than throw it in the bin🤣

I know some people hate it. I orfered a small pot and have recieved 500g. Its a lot of cottage cheese!

Ive had some on crackers but what else?

Longley farm on Pringles.

Longley Farm on tortilla chips. Second choice is Walkers Ready Salt crisps. I am sure Pringles would be just as good.

i made this yesterday after seeing it in this months GH magazine. It was absolutely lovely! Normally I’m a Longley farm lover, straight from the tub, lots of black pepper! Unfortunately I foolishly ordered a Morrisons brand recently and it was a watery mess so decided to use it in this recipe.

Make a pasta sauce! I usually blend it with spinach, roasted red peppers and other bits to make a protein packed pasta sauce.

Was already planning a spanokopita-style pie tonight, and inspired by a pp, thought I could use up the half tub of cc I didn't know what to do with. Got halfway through the recipe and realised someone had eaten the bloody cc so had to send child out for more for the spanokopita...and now I have another half a tub off cc left over...

At least I have more ideas for using it up now!

I HAVE FOUND THE LONGLEY FARM. I bought plain and pineapple , always loved pineapple cottage cheese but dont see it often these days.

We ended up with some Cottage Delight stuff recently (had never heard of it) - ughhh, cheap & nasty. 🫤

Homemade if I have it - currently red gooseberry! But I also top with pesto if there’s a jar to finish.

I’ve just remembered that ages ago an old friend made me sort of sauteed patties of cottage cheese, bread crumbs, scallions and lots of seasoning, possibly Parmesan. It was coated (I think) in flour, egg and more breadcrumbs before the frying.

Served with a spicy green sauce I was not familiar with. Delicious. Possibly the dish was Eastern European. I have never seen it since but would be grateful to learn more.

I have only seen Longley Farm in Heron near me (discount food shop). It's weird how much nicer it is than any other full-fat cottage cheese. I have half a pot for lunch with crackers and crudites or soup. Filling and delicious.

LF is delicious and filling because it is 6% milk fat, about 50% more than most other full fat cottage cheese!

I don't mind some of the supermarket full fat ones but I tried the new Philadelphia high protein one last week and it was awful, really dry and rubbery and had stabilisers in like the cream cheese. Also tried Grahams from Scotland which is mixed with cream but it was not tangy enough for me.

I’m in the US but I have found a delicious CC. The brand if Good. 2% milkfat. It’s hard to find though.

I can't stand the stuff, but if I had that much I'd just blend it to within an inch of its life, add as much flavouring/herbs/garlic/onion/spices as I could, add to beaten eggs, add REAL cheddar and bits and bobs, and bake into a frittata type thing.

And serve it to others....

I'm American in UK and was horrified when I was back in the Midwest and had a bite of cottage cheese. It was sweet compared to here and I instantly gagged. I'm all for some nostalgia sugary bread but this was a shock.
