If these were the contents of your fridge/cupboards what meals would you make? Looking for inspiration different from the usual.

Meat

Chicken drum fillets
Chicken mince
Cooked chicken drumsticks
Frozen white fish
Tinned tuna
Tinned mackerel
Tinned sardines
Anchovies

Dairy

Cheddar cheese
Mozzarella
Blue cheese
Natural yoghurt

Assuming you have bread, I’d whip up a tuna melt using the tinned tuna, cheddar and red onions. With a cucumber and tomato salad on the side.

Or a lovely asparagus & cheddar omelette.

I’m trying to cut out bread to lose some weight but of course omelettes! Had forgotten them.

Use the white fish in a foil parcel with any variants of the veg inside too, flavour with what ever herbs, spices you have. Cook from frozen, for c 20 mins.

I would stuff the chicken fillets with one of the cheeses (probably the blue) and half cherry tomatoes. Baked on a bed of finely sliced onion. Make a dressing of garlic, oil and lemon and pour generously over in the last 10 minutes. The onions should be caramelised.

Serve with chopped raw spinach and fried 'rice' made with couliflour rice oil and seasoning.

I made a meal once of chicken mince, cheese and spinach meatballs in tomato sauce, served with rice (though you could use your spaghetti). It was actually quite nice.

Fry the anchovies with garlic until they have melted, add the butterbeans and liquid from the tin and cook for a few minutes - the beans will soften and the liquid will thicken - add some finely chopped broccoli for the last couple of minutes of cooking.

Chicken koftes using the mince, served with salad and minted yoghurt

Fried caulirice with the cooked meat from the drumsticks cubed, with a few halved cherry tomatoes for colour

Fried eggs with chopped anchovies on top, plus sliced avocado, sprinkled with chilli flakes

I’m fed up of eating the same stuff but have already done the shop, and it’s worked. Got lots of new ideas.

Having this chicken now with asparagus, broccoli and sprouts and walnuts. Absolutely delicious.

Ah I wouldn’t mind but I so nearly did then thought no one would want to see. Just ate the last bite, gorgeous. Definitely being added to my regular list.

I also think it would work with sun dried tomatoes. I used a double shot glass to do a third each olive oil, lemon and garlic paste and I think I’ll use that dressing very regularly now. Might even marinate chicken or salmon in it.

Sometimes on its own -DH likes it with crusty bread.
Sometimes as a side for fish
