Travel fans, inspo needed - Gatwick Airport - where can we fly off to for 3 days?

So looking for inspo...this is what we have:

We will be dropping DS on:
Monday 19 January
6am Gatwick North Terminal

DH had the idea of, if we're travelling to airport and dropping DS off why dont we shoot off for 2-3 days!. (We need to be back in UK for Wedn night latest) So where can DH and I fly off to for 2-3 days

Istanbul. There is a 10:20 direct flight to Istanbul on 19 Jan and a 15:10 return on Wednesday 21 Jan.

Do you want warmth or cold? Lookong at TUI options for 2 nights:

Warmer - Seville or Valencia.

Colder - Amsterdam, Berlin or Krakow.

Not bothered about weather...but want short flight time.

Just feel like doing something spare of the minute, but got to tie in with drop off time etc.

How short is ‘short’. Because I’m finding Istanbul for 57 quid on Wizz. 4 hours though.
