Chunky Soup Recipes

Hi, I’m looking for some new soup recipes, that can be made in the slow cooker or on the job. I’m not a fan of blended soup. There’s a nice lentil one that I make with curry paste and mango chutney, and also a Waitrose recipe that au made after Christmas with butternut squash and a few other bits. Any ideas welcome

Chicken and sweetcorn chowder?

Chop onions and celery and sweat them down in (a large amount of) butter. Cut potatoes into small pieces and add to the pot with cooked chicken (it's good for using up any leftover roast chicken), sweetcorn, and some salt and pepper. Add majority milk, a bit of single cream, plus a small amount of water and a chicken stock pot/cube until it's liquid enough for your tastes. Simmer until potatoes are cooked and chicken is sufficiently reheated.

It's obviously not insanely healthy, but it's simple and tasty and always goes down well here.

Thanks for this. I’m a bit funny about milk, could I use all cream instead?

Minestrone soup. I can't find the recipe I use online but this one is pretty close.
