Chowder? I don’t know how but I keep seeing videos of people making Turkey chowder and it looks amazing, chicken is probably just as nice.
Or the obvious, make a pie.

Chicken & mushroom pie, with thyme. Or chicken & mushroom cream pasta.

I tend to make left overs into chicken & veg soup and freeze it, to be available when someone gets a cold (or a hangover). It works wonders 🙂
