Red Velvet Cake using beetroot recipe ?

I have a lot of beetroot to use up - so someone is getting a red velvet cake.
Can anyone recommend a recipe that uses beetroot rather than food dye please? Tried the Butternut Bakery one and it's not very red. Might have used too much cocoa though.

Short answer- no
I've tried red velvet cake a few times before being told you need to use gel or paste food colouring, not the liquid stuff. Otherwise, you end up with a browny cake rather than red.

I've also made beetroot cake using fresh beetroot from the shop. It tasted woody and akin to mud and was still browny 😬
