Dinner tonight inspo

DH and I both said today we fancy something “really tasty” for dinner tonight, but neither of us can conjure up any inspiration.

What are you having? Any links to recipes gratefully received.

I really love a shakshouka. Basically tomatoes with cumin and paprika, with poached eggs and some crusty bread. I like to fancy it up with some feta, hot honey, and even some chorizo as well.

I love a really good risotto with loads of roasted veggies and cheese; or pasta, pesto and loads of roasted veggies and cheese. With wine, obv.

You can add some chorizo sausages if you eat meat 🤗

We are having chicken 🌮 tacos, frying the chicken with a Nando’s rub then lettuce, sour cream and cheese on top, cheesy nachos on side

We quite often a spice taylor packet if we want something nice and relatively easy.

Or fajitas with lots of sour cream, veg, home made guacomale, jalapeno peppers and nice salsa from M&S or home made.

We had a Spice tailor pack on Wednesday, we really like them.

Fajitas are a good shout as I know the kids will eat them.

Although front runners are currently Tuscan chicken or Shakshouka

I had brie and fig chutney in a puff pastry case yesterday in the restaurant at work. Lovely. I think you could substitute cranberry sauce for the fig chutney. They were quite big (two slices of brie in it) - similar recipe (though much larger quantity) here - Baked Brie en Croûte With Thyme and Fig Jam Recipe. I'd use shop-bought ready made pastry though, hehe.

Roasted pumpkin stuffed with leek and bacon lentils - which were cooked underneath a couple of grouse we had for dinner yesterday. Probably with lots of cheese on top

We're having freezer leftovers today so beef brisket (stewed in beer) for one of us, with mash and yorkshires and cannelloni for the other. But if you're looking for ideas, yesterday we had pasta all norcina and another tasty one recently was Greek lemon chicken and potatoes with Greek salad.

Just an easy traybake here, roasted med veg, sundried tomato pesto, gnocchi and halloumi all thrown in.

We had chicken, peppers and butter beans in a chilli tomato sauce done in slow cooker with buttery mashed celeriac and a slice of buttered dark rye sourdough, tasty but healthy IMO

I’m having chicken coated in Baharat spice mix and air fried. With a baked sweet potato, and some courgette and asparagus tossed in a lemon and garlic oily concoction. Washed down with a large white wine

BBC good food do really good recipes, easy to follow. I did their cauliflower cheese but DH found it a bit bland.
