Low carb vegetarian meals

I am vegetarian and have been for 2 years but am reallly struggling to eat healthily, have energy and not pile on the weight.

please tell me your vegetarian recipes and what I should be eating - ideally non rice/pasta/potato ones.

I do eat dairy.

Beanburgers with a decent side salad - I use chick peas and butter beans and onion and mush it all together and typically add some spices, fry up and a thin halmoi slice on top

omlettes with a big coleslaw on the side

mushroom soup - mushroom and onions cooked in milk

-Shakshuka. I add a tin of chickpeas for more fibre/texture
-Acorn/kuri or other squash cut in half and filled with grains/tomato/onions/cheese or whatever you like to eat
-Fajitas/wraps with veggie halloumi instead of the chicken

Vegetable tagine. I cheat and use a tagine sauce, and add onion, garlic, chickpeas, butternut squash or sweet potato, mushroom, green beans, brocolli or tenderstem, peppers. I add falafel at the end.

Lean into beans, tofu and Quorn, eggs if you eat them. Last night I had a veggie shepards pie with lentils and aubergine, sweet potato topping and broccoli on the side, tonight it's a chickpea stew with salad although I will have some sourdough with that. Tomorrow it's Dan Dan noodles so I will be having wholemeal noodles but will mostly be pak choi and tofu. Saturday is a homemade bean burger and salad with sourdough rolls and Sunday will be Korean BBQ Chicken (Tofu) with chinese leaf, veggies and a bit of brown rice.

I do eat some carbs but try to stick to smaller portions of wholegrains for the most part and I balance it with lots of veggies, pulses, protein and healthy fats.

Is there a reason you want to cut carbs out totally? I prefer more a low GI approch to low carb.

Veggie chilli or curry with cauliflower rice? I make cauli rice in bulk and freeze it which makes it easy to cook. I dry fry in a small frying pan with some spices and a lid on for a min, then leave lid off so it doesn’t come out soggy.

If you eat eggs, make a frittata with various veg (I like leeks in it) , onions, some fat free cottage cheese and a bit of strong cheddar for extra flavour.

Make your own wraps to fill. There are easy recipes on YouTube for low carb wraps made from eggs and cottage cheese, and baked in the oven. Then fill with salad, hummus, halloumi etc.

I’ve just remembered another thing, which is courgette pasta. I think you might need a spiraliser for that, though.

Here's a youtube channel called Heavenly Fan. She posts plant based (vegan) recipes which are more or less keto as well, which I thought was nigh on impossible.

Lots of cabbage.
Stir fried, raw in salads, braised with butter.
It's cheap too.

As said, eggs are great, served with salad or veg.

Last night I made veggie spag bol, I didn't have any pasta, just a good bowlful of bolognese which contained onion, canned tomatoes, peppers, kidney beans, veggie mince, herbs and pepper. This can be made and add chilli flakes instead.
