Gravy. Even a Jus. Please help!

I need an amazing gravy recipe where there’s no meat roasting from whence juices are available. What can I do so it’s a comforting flavourful gravy? Everything else I’ve tried has been insipid or just tastes of burned wine or onions floating in brown water. No need to be veggie. Thx

I don't have a recipe because I do everything by eye, but when I need to make a decent roastless, yet meaty, gravy, I melt a massive chunk of proper butter, make a roux with flour, cook until biscuity, slowly add in decent beef stock (or chicken) and then add in loads of marmite for colour and umami. Let it bubble and thicken. Salty, easy, satisfying and not a burnt onion/herb in sight :D

I use this onion gravy with sausages.

finely slice onions and fry in an obscene amount of butter.

Once cooked sprinkle in plain flour and make a sort of roux, add water and a stock cube or if you have stock use that.

Almost perfect, just missing the sugar in the onions and the slosh of red wine. Yum.
