Reasonably easy, tasty, looks good, Vegetarian ideas for a dinner party for a few friends 😊

If your vegetarian or vegan, and you went to dinner at a reasonably close friend’s for dinner, what would you like to eat…

I'm not vegetarian, my friend is, our other friends aren’t. There will be 6 people
however I’d like to cook a vegetarian meal for us all, I’d like something that’s reasonably easy but looks and sounds good ☺️ 🙄 😆

Hard to make it look pretty on a plate but, to me, sounds and looks delicious, and it is really tasty. I made it for my vegetarian MIL a few times.
Don't be put off by the long list on ingredients, they're either fresh veg or straight forward store cupboard things. I think I've bought frozen chunks of butternut squash instead of the squash listed. The only annoying bit is peeling all the shallots. But it's worth it.

I'd always go for a curry feast. So easy to make vegetarian or vegan and absolutely delicious.

Tarka daal
Bombay potatoes

Paneer for the veges - just brown it off in a dry pan with some cumin or curry powder
I'd make home made flatbread, but you could easily buy them in
Salad (tomatoes, lettuce, onion)
Raita
Mango chutney
