Boxing Day Salads

For boxing day I am thinking of doing a buffet style meal with leftover turkey, ham, sausage rolls, pate, smoked salmon, cheese, hassleback potatoes, rolls, along with chutneys, pickles etc and I would like to serve these with salads.

Has anyone got any good salad recipes that would go with a buffet like this. I would like to go beyond my usual of salad leaves, cucumber, tomatoes, avocado, pepper and balsamic dressing which is a bit boring.....

Sounds delicious. I usually default to one green salad, one grain-based, and one other.

So I might do e.g. rocket and watercress, a veg-heavy tabbouleh-style or rice salad, and a pesto pasta (homemade pesto).

I also LOVE making an old-fashioned Waldorf salad, or a coleslaw with apple and sultanas.

Personally I never bother with couscous, none of my family seem that invested 😁

I usually make my own coleslaw - white cabbage, onion, apple, carrot, celery, all chopped small, and only just enough* mayonnaise to bind it. There’s hardly ever any left. Goes v well with typical Boxing Day fare, e.g. cold turkey and gammon. I usually make a macaroni pie, too - a bit like macaroni cheese, only with added eggs and baked, so it cuts into nice neat portions.

*I hate the stuff that’s swimming in mayo and TBH all the sort of shop coleslaw, that has too much watery, vinegary ‘mayo’.

Indian and SE Asian salads and pickles are usually a hit at my house. They aren’t too complex either.

I love a Greek salad with tomatoes, cucumber, red onion, olives and feta with dressing made from fresh lemon juice, good extra virgin olive oil and chopped fresh mint. Or a quinoa salad with chunks of roasted butternut squash, pumpkin seeds and dried cranberries (can add feta to this too)
