What’s on your meal prep menu, and how do you make sure it freezes well?

I’m trying to get into meal prep and stock the freezer up to have a rotation of meals for the next couple of weeks, but im really struggling with meal ideas! I’m only really wanting to prep lunch and dinner at the moment

at the moment im planning to cook a sausage and bean casserole, a beef stew and something pasta related.

I am wary though because I know pasta and potatoes don’t freeze well. How can I counteract that?! Any ideas?

@Luciey can you share the Korean mince and Mexican beef recipes please, if they are online?

Korean beef mince (I add green capsicum and it freezes great) - https://www.skinnytaste.com/korean-beef-rice-bowls/

Mexican shredded beef is from a book but essentially it's a dry rub on a blade/chuck roast with tinned tomatoes, onions, garlic and brown sugar in the slow cooker.

Korean Beef Rice Bowl

An easy and delicious Korean Beef Bowl recipe served over rice made with ground beef, cucumbers and gochujang sauce.

I use glass Tupperware, 630ml rectangular ones because they can go from freezer to oven so no need to switch it into a different receptacle to cook.

I’ve ordered some foil containers because they seem slightly easier to use!

Ikea do really good glass containers. They are good for freezing .
