What's for dinner this week- vegetarian

I am newly vegetarian of about 1 month standing. DH has been vegetarian for 6 years but mainly east sups and salads so he has mostly sorted himself out for a while now. Dcs are 13 and 15 and I do cook them meat but they love love love alot of the tofu dishes I make and as they eat meat at school lunches it won't hurt them to be vegetarian most days at home.

This week I have on the agenda ;

Roasted swede, potatos, sweet potatos peas and onion gravy (tonight)
Creamy coconut veg curry with rice and pappadums
No chicken chicken Kiev from Aldi with broccoli and mash.

Things that have been a hit the past few weeks include spinach and mushroom lasagne, red pepper bolognese and good old pesto pasta. Plus fried rice with smoked tofu pieces in it.

Keen for other ideas as i am really enjoying trying new things and making vegetables the main focus.

Vegan Bolognese - tin of green lentils in place of mince, start with soffrito of onions, celery and carrot, add diced mushrooms (chestnut and other if you can), then lentils, passata, tom puree, veg stock and good glug of Henderson's relish. I make in bulk and turn some into lasagne for another day.

Aubergine and spinach lasagne.

Roast root veg (whatever needs eating up) stirred through pasta, feta or cheddar on top. Bake in oven or eat as is

We aren't vegetarian but we do eat some vegetarian meals. Last night we had spagetti with a tomatoey sauce made with black lentils. It was a recipe from an account I really like in Instagram called Sebscrispyclub. His food always looks delicious. It's not all vegetarian, but lots of it is.

what do you load your nachos with? I usually do salsa, guac, sour cream and grated cheese. But thinking using lentils into a chilli ragu like the Bolognese idea upthread. Smile

We're not vegetarians, but this is still a favourite, it's bloody lovely and I add a flatbread to fill it out.

One tip which makes it a million times easier to coat the cauliflower: stick the pieces in a small plastic bag with the harissa, a bit of olive oil and shake. That was such a game-changer for me after spending forever trying to brush the harissa onto the cauliflower

I also like the sauce from the below recipe but substitute the chicken for paneer to make it veggie. This recipe is almost exactly the same as restaurant butter chicken.

I also make this but I don't use vegetable stock, I just use water and add more salt. Vegetable stock makes it taste too soupy and I prefer it like a dahl. You could add chickpeas too.

I also have a lot of thai red or green curries and just leave out the meat if I want it veggie.

Falafel wraps are a nice weekend meal for when you have a bit of time, falafels are a bit of a faff in the week though. You can cook them and freeze them but they're nicer cooked fresh.

Here's this week's meal plan in this house:

Beans and greens pasta (black kale, spinach and chickpeas, all in one in the Instant Pot)

Sosmix, chips and beans (sosmix is a dehydrated sausage mix, basically the only substitute available in the early 80s and therefore my ultimate comfort food)

Dal, rice and paneer (dal and rice cooked in the Instant Pot, paneer grilled or airfried coated in spices)

Bulgur with tomato, aubergine and lemon yougurt (from Ottalenghi's Simple book - it was easy and delicious)

Thai Green Curry with sticky rice (tofu, baby aubergine, tenderstem broccoli, baby corn)

Burritos (roasted black beans, sweetcorn and squash)

Rice noodle salad with cucumber and poppy seeds (again, from Simple - I've been picking a book to use each week for a couple of meals)

Vegetable crumble - basically a whole load of root veg with a bean of your choice (cannelini and kidney works well), parboil the veg then add the veg and beans to a sauce made with flour, butter, tomato puree, bay leaf and veg stock. Topping is oats, breadcrumbs, seeds and cheese. I make it slightly differently every time. I usually use potatoes and/or sweet potatoes, leeks, onions, carrots, and parsnips. The leeks and onions I fry up separately.

My version of a meal plan this week. Any actual recipes are from BBC Good food.

-pasta puttanesca without anchovy
-omelettes with whatever green veg we have
-butternut squash, chickpea and coconut curry
-simple mushroom curry
-egg fried rice with the leftover rice from the curry
-baked potatoes, probably with butter and cheese

These are a few we plan to do over the next week

Spanakopita - with side of salad
Cheesy marmites - usually with mash and veg
Moroccan tagine - veg, beans, lentils etc with cinnamon
Tofu and veg stir fry
Nut and lentil roast - grain salad
Left over nut roast mix as balls in a ratatouille with pasta

Orzo (sundried tomatoes, cannellini beans and spinach in a white wine herb sauce)
Fresh pasta (I need quick and easy meals due to being disabled)
Paneer butter masala

Not sure what else yet as there's an awards ceremony this week to go to.
