What's for dinner this week- vegetarian

I am newly vegetarian of about 1 month standing. DH has been vegetarian for 6 years but mainly east sups and salads so he has mostly sorted himself out for a while now. Dcs are 13 and 15 and I do cook them meat but they love love love alot of the tofu dishes I make and as they eat meat at school lunches it won't hurt them to be vegetarian most days at home.

This week I have on the agenda ;

Roasted swede, potatos, sweet potatos peas and onion gravy (tonight)
Creamy coconut veg curry with rice and pappadums
No chicken chicken Kiev from Aldi with broccoli and mash.

Things that have been a hit the past few weeks include spinach and mushroom lasagne, red pepper bolognese and good old pesto pasta. Plus fried rice with smoked tofu pieces in it.

Keen for other ideas as i am really enjoying trying new things and making vegetables the main focus.

We eat a lot of tofu - it's brilliant in the air fryer. We put it in a Thai curry or a stir fry, or in bibimbap. Bibimbap is one of our favourites at the moment - it's basically rice, quick pickled vege, tofu, spinach, a fried egg each and a spicy gochugang sauce. It's easy and delicious.

We like vodkas pasta or pasta puttanesca. The latter is a brilliant way of getting lots of veg at once. I also make courgette pasta a lot - fry onion and garlic, plus diced courgette - I like to keep the courgette still quite crispy - then add chilli flakes and some garlic and herb cream cheese.

Another favourite is a veggie sausage casserole using Fry's vegan hot dog sausages. Fry onion, diced carrot, celery. Add passata, honey, mustard and paprika, plus a drained tin of lentils or butterbeans and sliced sausages. We have it with hassle back or baked potatoes.

Sweet potato and peanut butter stew - there are loads of recipes out there, but I think the Taming Twins one is the one I've used in the past.

Quick and easy quiche - ready rolled pasty / stab it a bit / put a layer of red onion chutney on to the pastry and top with grated cheese and three eggs beaten with a bit of soured cream. Bake it on a hot baking tray to ensure no soggy bottom even without baking blind.

what do you load your nachos with? I usually do salsa, guac, sour cream and grated cheese. But thinking using lentils into a chilli ragu like the Bolognese idea upthread. Smile

Three bean chilli. Or any beans at all basically. I use butter beans, black beans and cannellini beans - just a tin of each and cook up the same way you would have a meat chilli. Goes brilliantly with jacket spuds and salad.

We're not veggie but we eat a lot of veggie meals for health, lower calorie and tbh, cheaper ingredients.

I can't bear fake meats, I loathe quorn and so I never use it. I really enjoy veg-heavy meals and lament the lack of things like spicy bean burgers being available at burger joints any more in favour of quorn type stuff.

I make lots of veggie curries, veg pasta sauces and soups. I've just made a pot of roasted tomato, carrot and garlic soup (basically roast everything in the air fryer!) which is now sat on the hob for later.

Also lots of rice dishes like bibimbap, any fried rice or biryani can be made with any veg you have or enjoy.

Shakshuka is fab and really quick to make.

Paneer is great for curries. I also make a lot of dahl, potato picnic curries, oven baked onion bhajis, and freeze excess portions.

Halloumi or goats cheese (if you eat them) are delicious with a pile of roasted Mediterranean veg and sourdough or crusty bread.

Amy Sheppards cheesy lentil bake with paprika wedges is gorgeous, even my meat fiend 17yr old likes it.

Made a curried cauliflower cheese the other day which was lovely and moreish, could have it alone or with roast potatoes and peas.

I'm yet to try and new recipe for cauliflower soup with spiced roasted chickpea garnish, will let you know if that's any good.

Today I made indo Chinese paneer lots of veg and some nice paneer cooked with some soy and sweet chili sauce will be yummy!!

I make this a lot ... You can do massive quantities and have it for a couple of days or freeze. We use the best veggie sausages we can find, but I have also done it with fried-off tofu.

Bruschetta with tomato, mozzarella and basil

Fave veggie meal here is a simple chickpea and spinach korma with rice, quick and so delicious!! Nice with Rose or some bombay potatoes! Lots of these sound lush!!

Lentil and vegetable lasagne
Imam bayildi - love this. Loads of recipes out there, and as I've only just started making it myself I haven't settled on a definitive version yet.
Stuffed mushrooms (cream cheese, garlic butter, breadcrumbs) with vegetable rice
An autumn vegetable soup with vegetables from both garden and fridge
Veggie burgers and chips - freezer food for a lazy day
Quesadillas with assorted dips/guacamole
Probably another lazy day with baked potatoes/beans/cheese/coleslaw/ whatever we fancy

Vegetable frittata - using up any roast veg that is left over from the
Roasted veg, giant couscous and halloumi tray bake
also black bean burritos
pasta with homemade tomato sauce (make a big batch at the weekend (includes loads of veg) and then freeze sauce in small amounts so is useful for next few weeks
might also do portobello mushies with goat’s cheese
and just did a red lentil and carrot soup for lunch

A lot of mexican is vegetarian.
And if you want easy jacket potatoes with houmous and salad is one of my favourites of all time

If you’re happy eating a lot of cheese, Ina Garten’s recipe for aubergine parmigiana is a winner. It takes quite a while to make all the parts, so I make double quantities and put it in small serving dishes that serve 3-4, then freeze the ones we don’t eat. At that size, they cook from frozen in an hour and 15 mins so are a great low-effort meal at that point with a green salad.

Vegan here and having an easy noodle stir fry with superfood pieces (the new This stuff) and mushrooms tonight. Planning Vivera salmon pasta tomorrow (sometimes make a creamy avocado sauce with that), lentil and vegetable lasagne on Tuesday as I have more time, big batch of red lentil daal later in the week with flatbread or rice, and usually a roast veg night with roast cauliflower, broccoli, sweet potato, sprouts, potatoes, carrots with crispy tofu, hummus and corn on the cob as well. Sometimes gravy instead of hummus, or the adults might have a spicier sauce on the veg and tofu. Going to make some vegetable (avocado, cucumber, pepper) sushi at the weekend. Other regular dinners include bean or soy mince chilli with rice or in wraps or tacos, bolognese, puff pastry vegetable tart with extra veg on the side, mushroom or vegan chicken curry, lemon pesto spaghetti.

Does it work as well with vegetarian hard cheese.

As Parmesan isn’t vegetarian

Sainsbury's sell an Italian-style hard cheese which is vegetarian and makes a good Parmesan substitute in dishes like aubergine parmigiana. It works well with pastas and risottos too. Other supermarkets probably do something similar.

The whole Parmesan in vegetarian recipes and restaurant menu items is a huge bugbear of mine. I think it's becoming worse now because of confusion between vegetarian cheese and vegan not-cheese.

Do you like Quorn mince? I made a beautiful cottage pie tonight with mince, chopped carrot, onion and celery, soup stock, and mashed potato on top. Served with green beans.
