What's for dinner this week- vegetarian

I am newly vegetarian of about 1 month standing. DH has been vegetarian for 6 years but mainly east sups and salads so he has mostly sorted himself out for a while now. Dcs are 13 and 15 and I do cook them meat but they love love love alot of the tofu dishes I make and as they eat meat at school lunches it won't hurt them to be vegetarian most days at home.

This week I have on the agenda ;

Roasted swede, potatos, sweet potatos peas and onion gravy (tonight)
Creamy coconut veg curry with rice and pappadums
No chicken chicken Kiev from Aldi with broccoli and mash.

Things that have been a hit the past few weeks include spinach and mushroom lasagne, red pepper bolognese and good old pesto pasta. Plus fried rice with smoked tofu pieces in it.

Keen for other ideas as i am really enjoying trying new things and making vegetables the main focus.

Three bean chilli

Chickpea curry

Spaghetti arrabbiata

Sweet chilli halloumi wraps, wedges, Salad

Southern fried tofu, jacket potatoes, corn on the cob and coleslaw

And probably some sort of veggie risotto- creamy tomato and pesto maybe.

@Parry5timesbeforedeath we either use refried beans (either homemade or from scratch) with added lightly cooked onions and peppers or we add some leftover chilli to layer between the nachos then serve with homemade guacamole and soured cream 😋

@PurpleChrayn I've never really gotten along with quorn, but granted have not tried it for some 15 years. I really love a cottage pie also.

It will be the mild curry for tonight. Then I think I am going to try each of the suggestion on the thread.... we have some wonderful meals coming up!!!!!!

My Tesco have started doing these nice plant based bean burgers, they’re frozen but actually quite tasty. Under £2 for 4 (!) so nice and cheap, and far nicer than I was expecting too.

So Ill be having have one of those, new potatoes, broccoli, coleslaw, hummus, tomato cheese and butter with a wodge of mayo and black pepper.

It was delicious though I say so myself! Proper old-fashioned vegetarian food, especially with the wholemeal pastry. I think I got the inspiration from the thread on here a while ago dedicated to old-fashioned vegetarian food (Cranks! Rose Elliot!).

@Parry5timesbeforedeathdo you have a best tifi did you are willing to share please? I’ve always disliked it, but I know well that it would be a great addition to my diet. I’m thinking I’ve been cooking it badly.

I like getting the extra firm tofu and then i batter it in chunks and shallow fry like nuggets. I use sparkling water in the batter and it makes it super light. Or I crumb like a schnitzel. I imagine it would work really well in an air fryer, but I don't have one - yet.... Grin

I'm not a huge fan of silken tofu generally, so usually use either smoked or extra firm.

I also cut in chunks and use in curries. A week or so back I marinated it in a bit of honey, soy sauce and sesame seeds and then oven baked it.

I have a DS who has alot of food issues and prefers very plain food. Tofu has been a hit with him because the taste is so mild.

Frittata and salad tonight
Wild mushroom, sage and butternut risotto tomorrow
Dahl with green veg and coconut milk (new recipe not tried before but looks good)
Pasta with steamed cauliflower or broccoli or romanesco if they have it, tossed in garlic and chilli oil with toasted pine nuts and oregano

Tonight was a green lentil, chunky chopped mushroom and potato topped pie. Similar to a cottage pie in flavour, sliced potatoes as the topping. Lush.

You’re right, I had forgotten as am not vegetarian, just obsessed with this recipe. Sorry, I don’t know. I would have thought so, but that’s guesswork.
