Veggie packed lunch ideas

My DC are both secondary aged now but I've been making the same old packed lunches for years!

What vegetarian things do you put in packed lunches (or buy so the DC can make their own). I feel now they're a bit older maybe their lunches could be a little more sophisticated, but I have no idea what!

Any ideas gratefully received!

FWIW, they usually have a sandwich or a wrap (typically cheese & salad & chutney), a yoghurt tube, 2 pieces of fruit, a biscuit and a savoury snack like maybe a mini Quorn scotch egg or crisps.

Vegetable filled samosas.

Slices of vegetable quiche.

Slices of spanakopita.

Wedge of Spanish omelette/frittata.

Vegetarian cocktail sausages.

Tub of mixed antipasti...grilled artichokes, olives, tomatoes, cubes of cheese etc.

Tapenade or aubergine dip etc with breadsticks.

Puff pastry pinwheels - any filling you like, even cheese and marmite is great.

How about a stuffed pressed sandwich. Get a nice round loaf, take off the top and tear out most of the bread so you are left with a bread shell (you can use the discarded bread for breadcrumbs or croutons). Paint the inside with pesto (or tapenade) and fill with layers of roasted vegetables and mozzarella and then pop it in the fridge overnight with a weight on it. It’s delicious the next day. You can make individual ones with good quality bread rolls.
