I’m trying to knit my 8 year old a winter hat! Wondering how many I cast on and how many rows etc looking for a simple pattern to work out how many rows and decreases if anyone could help I’d be very grateful!

Agree your best bet is to google a free pattern and choose one you like the look of - there will be hundreds out there! It’s not really possible for any of us to tell you how many stitches to cast on and when to decrease without knowing what yarn weight or needle size you are using, so really best just to find a pattern you like and follow the instructions. (Including to follow the instructions for yarn weight and needle size!)

If you are ok with working in rib then I recommend the Mikki hat. It's a paid pattern from Lovecrafts (£4 I think) and there's a double knitting and an Aran version. It can be knitted flat and sewn up or knitted in the round on double pointed needles. Because it's rib it stretches to fit and the pattern gives instructions from baby sized to large adult.
