Cooked a roast chicken on the wrong day

I've invited family over for dinner this weekend. We agreed they would come over today, so I began cooking the chicken and the cauliflower cheese. It started to get a little late so I checked the WhatsApp. They're actually coming tomorrow not today 🤦‍♀️

The cauliflower cheese is easy to reheat, and all the veg is prepped and will keep in the fridge till tomorrow. What should I do about the chicken? I dont want to reheat the whole thing as I imagine that will dry it out. I'll probably carve it up but then how to serve it tomorrow? I could cook it in the gravey I suppose or perhaps the airfryer? Any genius methods for day old roast chicken?

Yes, I always carve meat when it’s cooled. It’s difficult to carve hot meat, it just falls apart.

Really puzzled by all the people horrified by the idea of reheating. Roast meat is best cooked ahead and sliced when cool. Slices more easily. Then put the slices in a metal baking container with the juices poured over.

Reheat in oven.

I do this with chicken all the time and it tastes great.

One chicken doesn’t go far though. Do another one and report back! .

Does it not go soggy, though? Especially the skin? I can see that the leg meat might survive reheating in gravy or stock, but if the breast meat is cooked then any further cooking and it'll be over - it's not as if it takes much, especially if you slice it.

I always cook chicken the day before I need it, it reheats really well and leaves the oven free for roasties and stuffing. It will be fine.

If you don't want to serve the chicken reheated in gravy or stock, chop it up and make it into a chicken pie, with a creamy white sauce, perhaps with leeks, mushrooms or diced pancetta. Everyone loves a chicken pie!
