Slow Cooker / Easy Prep Dinner Ideas

Life is going to get a lot busier in a few weeks time, and as a result we’re not going to have much time in the afternoon/evening for cooking dinner.

Can anyone share their list of easy quick / low prep dinners or slow cooker dishes please for some inspiration.

I need meals I can either chuck in the slow cooker in the morning, or that can be cooked and on the table within 30mins.

Meals to suit 2 adults and college age teen. Ideally trying to avoid ultra processed foods if possible but I think might be hard.

We don’t have an air fryer - but this might be something we need to get!

Hey,
I use my slow cooker a lot , usually chuck it all in the pot in the morning and it’s ready at tea time. Just sometimes need thickening.

my main slow cooker meals would be
-beef chilli
-sausage casserole
-stew and dumplings
-slow cooked beef
-curry
-bolognaise

mainly use for wintery meals, but ideal for us as a busy family of 4 , especially when the kids have clubs like swimming my etc which mean we are home later.

I would definitely recommend an air fryer - then google air fryer dump bags. You take them out of the freezer in the morning, chuck it all in the air fryer when defrosted and you’ve got dinner.
Also - frozen chicken goujons cooked in the air fryer then have with wraps and salad.
Pulled pork is nice in the slow cooker, again with wraps or on jacket potatoes (can be batch cooked in the oven then heated up in microwave).
Campfire stew is a nice slow cooker meal with mash or rice. I buy the ready made mash from the chiller section and microwave rice.

Chop an onion into wedges, put in the bottom of the slow cooker.
Beef brisket, cover in a nice spice rub of your choosing, maybe some chopped garlic. Place on top of the onions. Don't add anything else, no liquid. Lid on and cook on low all day.
Shred with 2 forks. Serve with the onions from the bottom, jalapeños /sour cream/guacamole/grated cheese in wraps or pitta bread. Sort of fajitas. Delicious.
