Tasty recipes with cauliflower

I managed to grow some cauliflowers.

What are great recipes?

I roast it with harissa. Make cauliflower, leak and white bean soup. The classic cauliflower cheese or more of a herby gratin. Anything else that works well? Went off them for years after eating a few that had been boiled to nothingness.

shake it in a freezer bag with a drizzle of oil and some indian spices and whack it in the air fryer or oven. makes a really nice side dish to curry.

Yeah you can't beat roasting it in a tin with a bit of oil, salt and spices. Sumac is a good one.
There is a good recipe for this with lamb meatballs in The Quick Roasting Tin book.

Jamie Oliver has a fish curry that involves cauli too.

I LOVE cauliflower. It’s my absolute favourite vegetable of all time.

Now we’re moving into autumn, my favourite thing to make (for lunch when I’m wfh) is cauliflower, garlic and ginger soup. I use garlic cloves that have been marinated in chilli oil so it adds a hint of warmth. Throw it all in my pot on the hob, leave it to simmer for 30 mins and then blend it still in the pot with my hand blender. Serve with a chunk of walnut bread. Minimal effort, maximum taste.

These are delicious treats as a bit of effort required for the prep -Gobi Manchurian/Buffalo wing style/Korean style- Fried with a batter and a chili sauce when cooked

I like seasoned cauliflower done in the air fryer with some grilled halloumi with salad leaves for a quick and filling meal.

I just ate a big bowl of cauliflower mash with fried eggs for breakfast. It’s just steamed until tender and puréed with butter, salt, pepper. I drizzle a little Essential Cuisine chicken glace on top and add extra butter and salt, squeeze of lemon.

I also like it roasted with olive oil and a mixture of fennel seeds, turmeric, cumin, smoked paprika, salt, pepper and chili flakes.

Thank you. These are all fantastic! Looking forward to working my way through them.

Any good tips for using cauliflower leaves? Will share them with my spoilt chickens, but there will still be enough to try.

I cut up the leaves into 1 inch ish pieces and mix with oil and roast. Then make soup with fried onion base, any other green stalks eg broccoli that haven’t been usable in meals, add a cubed potato, the leaves, stock, cook then blend. Surprisingly nice. Flavour however you like; I often add fennel seeds to the roasting leaves.

I came on here to say manchurian cauliflower. Had it in Newcastle and it was gorgeous.

You can stuff cabbage leaves like giant dollars. However you need to make a tasty filling or its too stodgy

I make a veg curry with cauliflower, sweet potato, spinach, curry paste and tinned tomatoes. I'm sure you could put the leaves in as well as the florets.

I actually really like a cauliflower steak toasted sandwich. I’m a creature of simple tastes. Add some ras-el-hanout or whatever herbs/spices you fancy to the cauliflower and pan-fry, grill or bake the ‘steak’ and it’s delicious but healthy.
