What’s for dinner?

I’ve run out of ideas.
This week we’ve had spag bol, coconut & lime chicken, hot & sour soup, salmon & spinach pasta.
I’ve got time to cook this week, but am lacking inspiration. In the freezer I have salmon and chicken breast, and don’t really want to do a shop. I’ve also got fresh veg, including squash and sweet potatoes .
Any ideas? What are you all having?
We are currently 4 adults and eat most things.

We're not much help, we'll be doing takeout or a ready meal tonight!

But, this week we've had spaghetti and meatballs, ovenbaked salmon with veges, steak with veges, and chowmein.

This weekend is cook a chook, which basically ends up being hot roast chicken sandwiches, and home-made burgers with fries - I'm looking forward to my satay chicken burger.

I think it’ll be a pretty basic feast of Greek salad without feta, halloumi and potato wedges with some sort of dip

Garlic and tomato prawns with spinach and rice here. With what you have in, i would be making some kind of fiery chicken bake with the squash and either harissa or chilli.

Home made pizza
dough in bread maker
passata whizzed up with basil, onion, garlic and sun-dried tomatoes in for sauce
spinach, red pepper, red onion, sliced garlic, jalapeño
parma ham, chorizo, njuda
feta, fresh mozzarella
on top

It's been a hot summer and I've felt lazy and uninspired most days.
Doing a shop today, and will likely cheat by getting oven- ready frozen chicken burgers, to be served loaded with pickles, mayo and other condiments, with toasted buns, salad, crisps etc.
Might go all out on Saturday and slow cook some chicken breasts from which I'll make chicken chow mein with loads of veg, and an easy chicken based casserole the next day.

Ive had a huge glut of tomatoes so I made roasted tomato, courgette and feta tart and home made tomato soup with toasted cheese ciabatta croutons.

Teryiaki beef noodles last night, probably Katsu Chicken curry or the half price lasagne i picked up in Waitrose, so good its not worth the hassle of making it yourself :-)

I’ve been rubbish at home cooking lately, so tonight I’m batching a load of mince (which seems to have doubled in price!! Anyone else noticed this? I get the 5% fat) and making spag Bol for dinner tonight, a lasagne and a chilli con carne for the freezer.

tomorrow: bbq sausage traybake.
Sunday: roast chicken dinner.
Monday: jacket potatoes, toppings and salads

We're having pizza - home-made bases (I like making the dough), bought sauce, and a variety of toppings. I'll have ham and mushroom, DS cheesey cheesey, and DH whatever I make for him (I'm home decorating, he's at work).

Yes, mince is getting pricey - I eke it out with veggies where possible.

I've been doing that too.
Something that used to be considered relatively inexpensive has really risen lately.
It's risen globally though, so we're not alone, not that that's much comfort when doing a shop.

So many 'basic' foods are becoming less affordable. We live in an area which produces lovely beef, but it's even more expensive (in any form, not just good cuts). Luckily we all like veggies too!

Yes that sounds good! I just do whatever I have in - sometimes some fried cabbage with sesame oil, or a tomato salad. Works with lots of things! I’m not a huge salmon fan so I do salmon for the husband and then sticky beef for me

I'm having nasi goreng with beef strips and a fried egg on top. I'll add lots of veggies.

I've just got back from Indonesia and am missing my daily staple already so will try and whip up one of my own and no doubt be utterly disappointed.

We are probably going to have Nigella’s curry in a hurry. But it does require a few ingredients you might not have: Thai curry paste, fish sauce, fresh coriander and poppadums (you can get away without the latter).
It’s quick, it’s easy and a crowd pleaser.
Or, Jamie Oliver’s Hit ‘n Run chicken tray bake ? You need skinless chicken (thighs preferable but breast will do), a bunch of Mediterranean type veg (courgette, onion, peppers, tomatoes) chopped in to big chunks, several slightly crushed garlic cloves (skin on). Spread out the veg, put in decent amount of olive oil, good amount of balsamic vinegar, quite a lot of smoked and hot paprika (loads more than the recipe says) and salt and pepper. Roast for about an hour and serve with rice.

I often find the made up/thrown together/random meals become quite popular. I've actually put my shopping back by a day this week because there's bits to use up!

Rice, lamb keema rolls, black lentil Dahl, salad and some garlic naan bread. I bought the lamb keema rolls but making the rest. I may make some spicy clear soup for on the side.
