I'll tell you what I did last week (two adults, no kids)
Pack of chicken drumsticks meat (cheap in Lidl) made into fajitas filling in the slow cooker, with onion, peppers and spices. Served with grated cheese, sour cream, mashed avocado, home made refried beans. (Two evening meals, one lunch)
Large pack of chicken thigh meat - chicken tray bake with peppers, courgette, garlic, onion and gnocchi. Cook with chicken spice mix, add cooked gnocchi later, stir in red pesto. (That was two evening meals and two lunches)
Rest of the chicken thigh meat - Thai green curry with peppers and courgette, three large portions.
Vegetarian pilaf in the slow cooker (mixed rices, lentils, peppers, onion, garlic, sun dried toms) with daal (DP daughter came over and she's vegan). The pilaf was six portions. Daal from a packet because I got two boxes of six on TooGoodToGo.
Roasted pork belly strips with paprika, chili and fennel seeds, served with boiled spuds, steamed broccoli and mange tout.
Pan fried salmon fillets, served with boiled spuds, steamed broccoli, courgette and carrots.
