I'm so bored thinking of what to make for dinner every night. Can I have some ideas please?

Relatively simple, not too calorific ideas would be great please. Don't eat much red meat but chicken and veggie meals most welcome. I can't be the only person so bored of thinking what to make?!

I made stir fry pork with veg, chilli and coriander noodles in firecracker chilli sauce. Lazy/extravagant all prepped by m&s today as only me eating tonight.

Pan fry chicken breast with whatever herbs and spices you fancy + a squirt of sweet chilli sauce or a big squeeze of lemon at the end. While it cools to room temperature, make a big green salad and add slices of mango. Put the sliced chicken breast on to. Serve with quinoa or new potatoes.

I really like Simply Cook for days when I run out of ideas . It’s 3 small pots of spices , mainly chicken dishes or prawns , highly recommend they are very tasty .

Gnocchi with a tomato and mascarpone sauce. Add bacon, chicken, veggies as suits. Serve with a side salad.

Serve flatbreads (I like the seeded ones) with chicken breast that has been marinaded in Nando’s marinade: lemon and herb and then fried off. Serve With salad and dips.

Asda sell frozen prawns in garlic and herbs. Add them to pasta. Make a sauce using chilli, cherry tomatoes and chopped courgettes and some crème fraiche.

Thats the best I’ve got but they are all quite quick.

We had chicken fajitas tonight. Quick and easy meal after getting in at 7. I prepped the chicken and veg last night and chucked it in the airfryer when I got home. Served with protein wraps, tomato salsa and sour cream.

After being sick of eating crap and takeaways because I had nothing planned for meals I decided to bulk buy some chicken from the butchers and freeze for days when I can’t be bothered. I just bought loads of different spice packets from Aldi ect and have chicken with veg potatoes, pasta, noodles, chicken curry ect.

gousto is really good for meal planning too.

Minced Turkey and veg chilli - I don’t follow a recipe but chop up whatever veg is in the fridge, fry it all off with the mince (always include a large onion and few garlic cloves) add heaped teaspoons of cumin, ground coriander, smoked paprika and chilli powder, a slug of wine, couple of tins of chopped tomatoes and some tomato purée, slosh of worcester sauce, a crumbled chicken oxo and simmer gently for an hour or so. Add a tin of mixed beans or kidney beans, simmer ten mins more. Taste and add more spice or seasoning if required.
Chicken orzo - sear some chicken thigh fillets that you’ve tossed in a bit of harissa and olive oil. Remove from pan. Add some random veg, chopped fairly small, fry off for a few min. Add orzo and more harissa to coat the veg and orzo. Add enough chicken or veg stock to cover, place thighs on top and simmer with lid on for about 20 mins (keep an eye and add bit more stock if needed). At the end remove the chicken and add some grated Parmesan and a dollop of soft cheese to the orzo and stir through before serving with chicken on top.

New things we've liked are, mango and coconut chicken with sweet potato chips and corn on the cob. And 50/50 pork/beef meatballs with flatbread or pitta and minty yoghurt.

Someone shared a simple recipe on here previously and I love it for a quick meal.

Stir Boursin into cooked and drained spaghetti.
Add in cooked bacon lardons
Voila! It’s a like a carbonara with a garlicky twist.

I add in some cherry tomatoes and olives too but it’s so simply and easy. Thanks to that poster! x

Meals this week

Tuna steak pan fried in ginger, spring onion, lemon and soy sauce with egg friend rice and veg stir fried in 5 spice.

Home-made sausage meatballs in sourdough bread with spinach, rocket, black, and green olives and sun-dried tomato salad and leek and potato soup.

Spicy baked chilli pork ribs with a mixed salad, butter beans in tomato sauce, guacamole, sauerkraut and garlic and coriander naan bread.

Pan fried breaded chicken a bit like katsu curry style chicken in a soup base with Chinese leaves and spring onions with egg noodles.

Salmon in watercress sauce with peas, broccoli, carrots and a salad.

On the menu this week we have

Thai fish cakes with salad and an Asian slaw
tandoori chicken, salad, flatbreads, raita, mango chutney
gammon with spicy pineapple salsa, sweet potato fries, peas and tenderstem broccoli
stilton stuffed mushrooms and salad.
honey and garlic prawn stir fry with stir fried veg and rice noodles
harrisa cauliflower and chickpeas with roasted veg and cous cous.
hot honey haloumi, watermelon and feta salad, garlic courgettes (and any other salad that needs using up)
