Good pasta dishes

In the mood for a good comforting pasta dinner maybe one with chicken and bacon? Or a tomato based one. Would anyone like to share a good pasta recipe with me?

Preferably not spaghetti bolognese or Lasagne. Love them both but make fairly often.

I'm obsessed with the Marry Me sauce - supposed to be chicken but I don't eat it so use mushrooms and spinach. I have that with pasta.

I'm obsessed with vodka pasta. I add chorizo and use a whole bag of pasta in the goodfood recipe as find it far too rich with 200g.

Freshly made pesto? Or anchovy garlic capers with fresh tomatoes is very simple.

I make a gorgeous mushroom and bacon pasta but would also be good with chicken.

1. Fry off bacon
2. add the chicken and cook through
3. add mushrooms
4. when all are cooked, add garlic, chicken stock and reduce
5. add roux/white sauce, black pepper, mixed herbs and a bit of cayenne if you like heat
6. stir in mozzarella
7. toss in cooked pasta

Butterfly some chicken breast and coat it in a mixture of flour and paprika. Fry that off and remove from the pan. Fry some garlic and mushrooms, then add chicken stock, cream and more paprika. Add the chicken. I usually serve it over potatoes but it would work well with pasta

This is incredibly basic, but it’s so delicious and really quick to make.

Fusilli pasta, mixed beans (not the one with sweetcorn in), a tin of chopped tomatoes, red pesto and some chopped onion. Boil the pasta, rinse off the beans then put them in the microwave for 3 minutes, in a little bit of water. Mix it all together, sprinkle cheddar cheese on the top and put it in the oven for 20 minutes. It is so nice!

Favourite simple dish here is courgette pasta. Cook the pasta and meanwhile cook the courgette in sunflower oil or butter with garlic and black pepper (lots) and add fresh basil when cooked. Add the pasta and a spoon of pasta water, mix and ad Parmesan. Easy, quick and delicious

I love a good tomato and mascapone sauce. My 'recipe' is half a tub of mascapone per tin of tomatoes. From there, just faff about and add what you like. Use the good tinned tomatoes - Mutti, or similar. Garlic, obviously. Whatever Italian herbs you prefer.

I had some leftover salmon (I cooked more than we needed for salmon ramen earlier in the week. I did a carbonara style sauce - beaten egg, a little of the cooking water, beaten well - and added lemon zest, lots of fresh parsley and the cooked salmon.

It took about 3 minutes over and above the cooking of the pasta and it was delicious!

I love a pasta dish but I can't beat any of these, I'm just lurking and getting fat just writing the shopping list...

Ooh, actually there's one I do sometimes, smoked salmon, creme fraiche, lemon, loads of black pepper, garlic.... 😚🤤

Chicken, chorizo, tin of cherry tomatoes, Philadelphia. Really quick and simple.

I saw a chicken with Boursin and lemon recipe on here, and it’s become a firm favourite. A whole Boursin (we like the black pepper one) and some lemon wedges. So easy!

Prawn linguine. Fry off onion, garlic, red chilli, add some fresh herbs and a little dried oregano, add a bag of frozen raw king prawns and cook off. Cook pasta, drain, stir in prawn mixture, a bit of decent olive oil and finish with parmesan and fresh oregano.

This is tasty:
Penne
Green pesto - i use about half a jar but add more if preferred
Sun blush tomatoes (not sun dried)
Olives
Feta cheese, cubed
Sliced Chorizo (or leave out if vegetarian)

Cook pasta, whilst pasta is cooking fry chirizo. Once pasta cooked, stir through pesto sauce, chuck in sun blush tomato olives and chorizo, stir through feta and serve.
Optional: Parmesan cheese grated on top

This recipe is a so tasty and so easy. I then served it over tagliatelle. To mix it up a bit, swap traditional pesto with truffle pesto but keep everything else the same.
