Home made pizza tonight as we always do and it's the teens favourite (and it's very vegetable heavy so win win all around)
But have been channelling our inner Greeks a lot this week
Rice with orzo, fresh herbs and lemon has gone down a treat this week with many salads
Slices of cold watermelon from the fridge as a snack
And off to find some peaches and strawberries a bit later

I'm trying to use up odds & sods from the freezer - just taken a duck breast out to defrost then I know will have to have that tonight! Plus roasted spicy cauliflower done in the air fryer.

Yesterday was an assortment of salads plus chicken shawarma (Felicity Cloake recipe) for the carnivores and grilled halloumi for me.
The night before that, fish cake tacos (Ottolenghi recipe)

Tonight I’ve run out of inspiration and oomph - it’s 32° and I want naps and choc ices.

How did you cook the duck?

It was a small breast, approx 150g, so didn't need much cooking:

  • Scored the skin and seasoned with salt & pepper then put skin side down in a cold non-stick frying pan - no oil
  • turned on heat to medium for about 5 minutes - the skin browns and turns crisp. The photo looks a bit pale but the skin was browner and crispier than it looks!
  • turned to other side for about 3 minutes - then leave to rest for a few minutes before slicing.

All very tasty!
