Afternoon tea ideas please

I’m hosting Father’s Day afternoon tea tomorrow and looking for ideas of what to serve. There are some restrictions: no chocolate, no meat, no shellfish, no egg mayo sandwiches 🤢

I’m thinking smoked salmon, cream cheese and tuna mayo finger sandwiches, malt loaf, plus a couple of cakes.

Could do with some more sandwich filling ideas and cake suggestions.

OP said no shellfish, so Prawns are out - cucumber sandwiches sound good though.

Cheese pastries
Scones - with jam and then with lemon curd
Cheesecake
Lemon drizzle cake
Victoria sponge

As for sandwich fillings, oooof. Cheese. More cheese. Different cheese.

You could include little sausage rolls and posh pork pies or some gala pie - with little pots of pickle.
An afternoon tea I went to served cheese and mango chutney they were absolutely lush.
jam tarts (Dads always like them),snowball cake things, roast beef and pink pickle with little pots of coleslaw.
flapjack fingers, scotch eggs quartered and devilled eggs.

Brie, basil and tomato
cream cheese and cucumber
poached salmon and watercress
Grated cheddar cheese and pickle
Wensleydale and chutney
roast vegetable and pesto

Coronation chickpeas as a filling - I promise it’s nicer than it sounds 😂
Or cheese and a nice chutney
you could buy or make cheese and onion rolls

also you could make pizza pin wheels with ready made pasty always go down well and super easy. Roll out the pastry, cover with tomato puree and grated cheese, roll up and cut in pieces and cook

BBC good food lemon cake is super easy and you could then cut into smaller cakes or make the batter and just use for fairy cakes, mix some lemon juice with cream cheese and icing sugar to ice

Flap jacks, altho not a cake very easy to do and cut into smaller bits

As you are very limited in your sandwich filling choices, add a bit of variety with the bread....
walnut bread with Brie and black grapes or any cheese filling
olive bread with tuna mayonnaise or mackerel pate
rye bread with smoked salmon or rollmops in sour cream or vegetable pâté

Add some savouries....
vegetarian sausage rolls
hard boiled quail eggs with celery salt
cheese straws
cheese scones
devilled eggs
vol au vents with mushroom or ratatouille filling
mini quiches.

Add some colour with shot glasses of chilled gazpacho or pea and mint soup

Don't forget the......
cream & jam scones
dishes of strawberries or raspberries with cream or mascarpone
jellies with fruit set in
tropical fruit salad
ice cream sundae

I make my cakes from scratch except 1 - betty crocker red velvet! delicious, I make it in a square tin and cut into small squares with a blob of cream cheese icing on the top, they would look nice on a plate of cakes for afternoon tea.

Smash up some digestives. Put in bottom of glass. Put couple spoons of Carnation ready made caramel (make sure it’s caramel and not just the condensed milk). Put fresh banana slices on next. Add some whipped cream to finish. Mini banoffee pie, super easy and yummy.

Coronation chicken for sandwiches is nice when made with chick peas not chicken as a vegetarian filling.

If I'm not serving scones (which would be overkill) I make a vanilla sponge sandwiched together with seedless raspberry jam, clotted cream mixed with vanilla extract (or lemon zest) and a little icing sugar. I then top with the clotted cream mixture and lots of fresh raspberries. Sprinkle with icing sugar and voila. Simple but it goes down a treat.

Sandwich filings, cheese and pickle, halloumi and sweet chilli, roast pepper and hummus, bre cranberry and rocket. Cucumber and cream cheese. What about mini quiche made in a muffin tin?

With the warm weather I would have done chilled option for dessert.

Lemon posset (very quick and easy) vanilla pannacotta with berry cooli, raspberry mousse. Caramel cheesecake.

Other sweets, banana and custard cakes (cupcakes with a tablespoon of custard and chopped banana plopped into the top of the batter before cooking)

Caramel cake (turn the butter and sugar and a little milk from the cake ingredients into caramel before adding to the other ingredients)

Strawberry cake. (Make a thick smooth strawberry compost and add to cake mix and to buttercream icing) With cream and fresh strawberries.

Carrot cake would be a nice change from the sweet/fresh offerings of everything else.
