Cake- will this be okay until Saturday?

Probably a stupid question.

It’s DCs first birthday this weekend and I’m baking a cake. I was going to do it on Friday, but have swapped a work shift last minute.

am I ok to bake and decorate the cake on Thursday, and it will still be ok on Saturday?

It will be a sponge cake, with shop bought buttercream icing. It will also have sand made out of crushed biscuits and chocolate decorations. If I make it and leave it in the cake tin, will that be ok? I won’t have room in the fridge.

I’m not an experienced baker, as you can tell! Thanks all

Cake is fine. I’d hold off on the buttercream if at all possible, especially with the heat the next few days. Wrap the cake up well in cling film to stop it drying out once it’s cooled. can you decorate it Friday evening/Saturday morning?

No it won't. It'll be edible and won't poison anyone but it's condition will have noticeably deteriorated. The buttercream will have seeped into the sponge and the 'sand' will be soft/stale.

What would work is if you could bake the sponges on Thursday, keep them airtight, with greaseproof separating the layers, then construct the cake (ie. fill and decorate) on Saturday morning.

I have a coffee/cake shop. I give standard cake three days before I won’t sell it (longer for brownies or flapjack etc). But it freezes really well and defrosts quickly if not decorated.

Could you do it Friday evening? Friday will be better then doing it Thursday.

Thanks all. I can bake the cake tomorrow. It’ll mean a late night on Friday decorating! Will that be ok or would it be best to wait until Saturday morning? It would mean a very early start though as we have plans Saturday morning!

Friday night will be fine. If you have everything ready and have planned how you want it to look it should only take you half an hour to construct the cake. You've got this!
