What do you eat for lunch and breakfast?

I have to feed two vegans for a few days soon. I think I am okay on the evening meals but I have no clue about breakfast and lunch. Cereal and toast I guess but what about anything more substantial, like Brunch?

And what sorts of things do you have for lunch? What can you put in a sandwich or a wrap? So far I've thought of falafels and hummus and that's it. Oh and jacket potato and baked beans, but it seems a bit basic.

I'm not vegan but cater for them occasionally. For sandwiches I do coronation chickpea (chickpeas mixed with vegan mayo and curry powder) - you can add red onion, chopped coriander, sultanas, almonds or apricots too. I also do vegan cheese (Violife slices are the best) with chutney & rocket. I also do smashed avocado (you can buy it in Waitrose and Asda) with sliced tomato & watercress. I also make a vegan egg & cress mayo with chopped tofu, vegan mayo, mustard and a pinch of kala namak (don't panic, you can definitely buy this from the spice rack in Waitrose) - it gives the mixture a sulphury, eggy smell and taste. I also do peanut or almond butter with homemade apple slaw - basically coleslaw with chopped apples mixed with either vegan mayo or vinaigrette.

For breakfast you could get some vegan croissants (Pret a Manger brand in Tesco) and serve with vegan yoghurt and some fresh fruit or cereal with almond milk, toast, vegan spread and jam (not honey!). For brunch you could do fried mushrooms on sourdough with vegan spread or vegan sausages with baked beans and fried potato. Or just a nice salad with sliced avocado, some tahini or hummus, lettuce and some vegan feta cheese drizzled with balsamic vinegar.

Vegans are usually just delighted that you've provided something they can actually eat so don't go too mad!

Thanks! I actually love catering for plant based menus. It stretches the imagination. Oh and is 12 noon OK?
