Sandwiches - really fancy a delicious one ...

Inspired by the other thread on people not taking sandwiches for lunch, I now really want a sandwich. I can't get a good sourdough anywhere today but fancy a granary with "something" but what ?
Cheese and pickle was my first thought but "nice" cheese and maybe a fancy chutney.
I like carrot and hummus too but want a way to make my grated carrot a bit more...shredded and not soggy.
I don't eat meat so wouldn't be after a BLT or anything but really want a fantastic sandwich.
What can I have ? Are there any lovely ones I've not tried ? Probably. I've not had much bread of late and really really want some

For the carrot, I'd put grated carrot in a clean tea towel and squeeze out any moisture.

I really like Morrison's tomato and habanero chilli chutney, delicious with a good mature cheese in a sandwich.

Recently a made a tofu sandwich. I cut half a block of tofu into 2 slices. Dusted with some spice rub. Fried in a pan until crispy. Put in a sandwich with lettuce mayonnaise and sliced tomatoes.

Go to M&S and get a hot chicken, add some good quality coleslaw or salad to it. Expensive butter. Yum.

I've just had a toasted banana sandwich for breakfast.
Another favourite is goats cheese, grilled bacon and cranberry.

Cucumber with good butter and salt and pepper on soft fresh bread.
Brie and grape in a roll.

At the moment, I'm adding hot sauce and crunchy jalapeños to most things, or at least omelette and sandwiches, so that's my recommendation!

Smashed chickpeas (from a jar not a tin), blended with lemon juice and salt and pepper layered over heritage tomatoes and avocado.

Brie and sweet chilli jam on a fresh crusty roll

very strong cheddar with garners shallots

chicken style pieces mixed with Greek yogurt, sun dried tomatoes, diced red onion, diced red pepper, smoked grated cheese

Old fashioned northern Irish salad sandwich (salad cream, onion or spring onion, tomato, egg, maybe lettuce) fresh granary or soft white salad roll.

My veggie daughter made me the most fantastic sandwich, grilled halloumi, red pepper hummus, fried red onion and tomato with mixed leaves, lightly toasted bread

Cut the carrot into matchsticks instead of grating. Bit of a faff but so much nicer. Not soggy at all. One of my favourites is cream cheese with matchstick carrot and cucumber ( no seeds), rocket, shredded iceberg, salt and pepper. Way nicer than it sounds

For fancy cheese and pickle try quartz cheddar with Waitrose fig chutney.

Mashed avocado with lemon or lime juice to stop it going brown, chopped walnuts and little gem is good. Sprinkling of chilli seeds if you like that.

Cheese and onion, old fashioned home grown spring onions. Taste like nothing else
Cheese and carrot
Cheese and old fashioned butter lettuce, lots of it

Cheese based sandwiches basically. Must have butter

Sambal halloumi morning buns - slice the halloumi, coat in sambal belacan (from Asian supermarket) and lime juice, marinate for 30 minutes. Fry the cheese until golden on both sides, serve in toasted buns with sliced avocado and a fried egg. Kewpie mayo (from Tesco or Morrisons) and extra sambal to taste.

If you're veggie not vegan then one of my favourites is omelette with kimchi in thick cut granary bread.

If you eat fish then I also love tuna mayonnaise and sliced banana, usually on a brown bagel but also pretty good on wholemeal bread.

Fried halloumi with mango chutney makes an amazing filling. I like it in a baguette.

Or brie with sweet chilli jam.

@Snooks1971 my fave shop sandwich too !
Am not offended by chicken suggestion - might get one of those for the others for tea while I eat sandwiches.
Brie is grabbing my attention currently. I'm a very recent convert to it
